Walnut Carrot Bread

  • 3/4 cup sugar
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup finely shredded carrots
  • 1 cup chopped walnuts
  • 1/2 cup confectioner's sugar
  • 1 teaspoon lemon peel
  • 1 Tablespoon lemon juice



Step 1

Preheat oven to 350 degrees. Grease and flour a 9x5" glass loaf pan. Beat the sugar and vegetable oil together. Add the eggs and vanilla. In a separate bowl, combine and whisk the flour, cinnamon, baking soda, and salt. Combine the flour mixture with the eggs mixture. Stir in the carrots and walnuts. Bake center-clean, about 1 hour. Cool 10 minutes in the baking dish, then cool on rack. Mix together the confectioner's sugar, lemon peel, and lemon juice. Drizzle the lemon glaze over the bread.
