Crockpot Whole Chicken and Vegetables

Place half of sliced onion on bottom of slow cooker crock
- 1 medium onion, sliced
- 1 (5 1/2 - 6 pound) whole chicken
- 2 teaspoons seasoned salt
- 1 teaspoon cracked black pepper
- 4 medium carrots, sliced 1 1/2-inch thick
- 4 small red potatoes, cut in eighths
- 3 celery ribs, sliced 1 1/2-inch thick
Chicken and Noodles Crockpot

Spray crock pot with non stick cooking spray or line with crock pot liners/parchment paper
- 1 lb chicken breast
- 10 oz can of cream of chicken soup
- 10 oz water
- 8 oz chicken broth
- 12 oz wide egg noodles
Rotisserie Chicken Cold Noodles

Bring a pot of water to a boil, add salt and cook soba or pasta to al dente according to package directions
- 8 ounces whole wheat spaghetti or soba noodles
- Salt
- 1/4 cup soy sauce or Tamari
- 2 tablespoons rice wine vinegar
- 2 tablespoons chili-garlic sauce
- Juice of 1 lime
- 1 tablespoon light honey or light agave
- 1 inch ginger, peeled and grated
- 1 clove garlic, grated
- 3 tablespoons peanut oil
- 1 bunch scallions, sliced on a bias
- 1/2 red onion, finely chopped
- 1/2 cup dry roasted peanuts, chopped
- 1 cup basil, torn or chopped
- 1 rotisserie chicken, skin and bones removed and meat shredded
- 2 cups shredded iceberg lettuce or heart of Romaine
- Pepper
Cheese Puffs

Preheat Oven 400f. Trim Crust From Entire Loaf
- 1 Loaf Italian Bread, Unsliced
- 1/2 Cup Butter, Softened
- 1/3 Cup Mozza Cheese, Shredded
- 1/3 Cup Cheddar, Shredded
- 4 Oz Cream Cheese
- 1/2 Tsp Dry Mustard
- 1/8 Tsp Cayenne
- Salt To Taste
- 2 Egg Whites
Potatoes Saucy Crock Pot

Spray your crock pot with cooking spray Mix together all of your ingredients and place in your crock pot Cover and
- 4 c potatoes, peeled and thinly sliced
- 1 c onion, sliced
- 10.75 oz can cream of celery soup
- 12 oz can evaporated milk
- 2 T butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
RED VELVET CREAM CHEESE BROWNIES

Preheat oven to 325 degrees
- Filling:
- 1 Duncan Hines Red Velvet cake mix
- 3/4 cup butter, after melted
- 1 egg
- 1/2 cup water
- 1 cup semi-sweet chocolate chips
- 4 ounces of cream cheese, softened
- 1 egg
- 3 tablespoons sugar
- 1/4 teaspoon vanilla
Grilled Chicken and Corn Salad with Chipotle Crema

Heat a grill pan or outdoor grill over medium-high to high
- 1 cup heavy cream or Mexican crema
- 2 tablespoons chipotle chiles in adobo sauce, puréed or finely chopped
- 1 pound boneless, skinless chicken
- 2 large ears corn
- 1/4 cup olive oil, plus more for drizzling
- Salt and pepper
- 1 tablespoon chopped fresh thyme
- 1 teaspoon dried Mexican oregano
- 1 teaspoon ground cumin
- Juice of 2 limes (about 4 tablespoons)
- 2 teaspoons acacia honey or light agave
- 6 cups chopped romaine hearts
- 4 ounces Manchego cheese, shaved with a vegetable peeler
- 1 ripe Hass avocado, sliced and dressed with lemon or lime juice to slow browning
Hamburger Potato Cheese Casserole

Use a 2 1/2 quart covered casserole dish for this
- 5 large russet potatoes, peeled and sliced about 1/4-1/2 inch thick
- 2 -3 tablespoons chopped onions
- 1 lb ground beef (really lean is preferable)
- salt and pepper
- Cheese sauce
- 2 cups milk
- 3 tablespoons butter
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces shredded sharp cheddar cheese
- ketchup ( optional condiment)
Groundmeat Casserole

Preheat oven to 350 degrees and grease a 9x13 inch casserole dish
- 1 lb. Hamburger Meat
- Half a jar of Spaghetti Sauce
- 1 envelope of dry Spaghetti Sauce
- Half a package of egg noodles, wide or small
- 8 oz Sour Cream
- Half a bag of shredded Cheddar Cheese
- Half a bag of shredded Mozzarella Cheese
- Half a bag of shredded Parmesan Cheese
Dipping Sauce for bread

- 3 Tbs Extra Virgin Olive Oil( Rosemary infused)
- 3 tsp Parmegiana Reggiano Cheese
- 1 tsp fresh chopped garlic
- 2 tsp Balsamic Vinegar
