Burrito Pie

Preheat oven to 350 degrees
- 2 cups cooked white rice
- 1 tablespoon lime juice
- 1 tablespoon chopped cilantro
- 1 teaspoon salt
- 4 10-inch flour tortilla shells
- 1/2 cup sour cream
- 1/2 cup salsa
- 1 1/2 cups cooked taco meat
- 2 cups grated cheddar cheese
Crescent Rolls Stuffed for Dessert

Unroll and spread 1 can crescent rolls on bottom of un-greased pan
- 2 cans Pillsbury butter crescent rolls
- -2 (8oz) packages cream cheese (softened)
- -1 cup sugar
- -1 teaspoon vanilla
- -1/4 cup butter (melted)
- -Cinnamon & sugar (I used about 1/4 cup sugar and 1 tbs cinnamon)
Taco Casserole

Preheat oven to 400° F and lightly grease a 9x13-inch baking dish with non-stick spray
- 2 pounds ground beef
- 1 (1 oz.) packet taco seasoning
- 4 eggs
- 3/4 cup whole milk
- 1 3/4 cups biscuit mix or bisquick
- 1/2 cup sour cream
- 2 cups lettuce, chopped or shredded
- 1 cup tomato, finely chopped
- 2 cups sharp cheddar cheese, grated
- Black olives, sliced, optional
- Kosher salt and freshly ground pepper, to taste
Boston Cream Cupcakes

Preheat oven to 350° and spray a 12-cup muffin tin with cooking spray
- Cooking spray
- 1 box vanilla cake mix (plus ingredients called for)
- 2 c. milk
- 1 (3.4-oz) box instant vanilla pudding mix
- 3/4 c. heavy cream
- 1 1/2 c. semisweet chocolate chips
Italian Pasta Salad

To make the pasta salad, bring a large pot of water to a boil
- 1 pound tri-colored rotini
- 8 ounces mozzarella balls
- 8 ounces salami
- 8 ounces pepperoni
- 2 cups cherry tomatoes
- 1 cup spinach
- 1/2 cup sliced red onion
- 1/2 cup pepperoncini
- For the dressing
- 3/4 cup olive oil
- Juice of 1 lemon
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon rosemary
- 1 clove garlic minced
Fried Green Beans and Onions with Creamy Mushroom Dip

Make the Mushroom Dip: In a large skillet over medium heat, heat oil
- FOR THE MUSHROOM DIP
- 1 tbsp. extra-virgin olive oil
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- kosher salt
- Black pepper
- 8 oz. cremini mushrooms, trimmed and chopped
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 1 tbsp. white wine vinegar
- 2 tsp. chopped fresh chives
- 1 tsp. fresh thyme
- Pinch of sugar
- FOR THE FRIED GREEN BEANS
- 11/2 c. all-purpose flour
- 4 large eggs
- 3/4 c. cornmeal
- 1 tsp. onion powder
- 1 tsp. garlic powder
- kosher salt
- 8 oz. green beans, trimmed
- 1/2 medium red onion, quartered, layers separated into petals

- 1 cup frozen corn or carrots
- 1 cup uncooked egg noodles
- 2 cups chicken broth
- 1 (10-3/4-ounce) can condensed cream of chicken soup
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 - 12 oz bag(s) milk chocolate chips
- 2 - 10 oz bag(s) peanut butter chips
- 2 - 1 lb pkg white almond bark or vanilla candy coating
