Roasted Cauliflower, Broccoli and Pasta Bake with White Cheddar Cheese

Position racks in the top third and center of the oven and preheat the oven to 400°F
- 1 head cauliflower (about 2 pounds), cored and cut into large bite-size florets
- 6 tablespoons olive oil, plus more for the baking dish, divided
- Kosher salt and freshly ground black pepper
- 18 ounces (about 8 cups) broccoli florets
- 1 1/2 cups (about 5 ounces) penne
- 4 ounces (about 3/4 cup) pancetta, coarsely chopped
- 1 small yellow onion, finely chopped
- 1 tablespoon finely chopped fresh thyme
- 1 tablespoon all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/4 cup (5 ounces) shredded white cheddar cheese
- 1 cup very coarse, fresh multigrain breadcrumbs (made in a food processor or blender from 2 slices of bread)
Cheesy Potatoes

1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 2 boxes (4.6 oz each) Betty Crocker® julienne potatoes or 2 boxes (4.9 oz each) Betty Crocker® au gratin potatoes
- 3 cups boiling water
- 1 1/2 cups sour cream
- 1 cup milk
- 1/4 cup margarine or butter, cut up
- 1/2 cup chopped red bell pepper
- 1/2 cup sliced green onions
- 1/2 cup shredded Cheddar cheese
Strawberry Pie

In a medium bowl, add the gelatin to cold water
- 1 Pie Crust
- 1 cup water
- 3 packets unflavored gelatin
- 1 jar strawberry jam (12 ounces)
- 3 pounds fresh strawberries (hulled and quartered)
- 1 lemon (zested and juiced)
Creamy Ricotta and Tomato Penne

Cook the penne in boiling salted water until tender but firm, about 11 minutes
- 3/4 pound penne or rigatoni
- 1 cup ricotta cheese, at room temperature
- 1/4 cup olive oil
- 1 pint cherry tomatoes, halved (or quartered if large)
- 4 green onions, thinly sliced
Waffle Brownies

- 1 box brownie mix
- 2/3 cup vegetable oil
- 2 eggs
- For variety, add raisins, walnuts, boozy berries, warm caramel, hot fudge or whipped cream.

- .25 cup(s) olive oil
- Salt
- Pepper
- 1 ounce(s) Parmesan cheese, grated (1/3 cup)
Crescent Easy Italian Casserole

- 1 pound ground beef
- 1 cup tomato pasta sauce
- 1 (8-ounce) can refrigerated crescent rolls
- 1 1/2 cup shredded mozzarella cheese
- 1/2 cup sour cream

- 3/4 cup butter, melted
- 1-1/2 cups chopped walnuts
