Swiss Cheese Vegetable Casserole

Preheat oven to 350 degrees F
- 1 can Campbell's Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
- 1/3 cup sour cream
- 1/4 teaspoon ground black pepper
- 1 bag (16 ounces) frozen vegetable combination (broccoli, cauliflower, carrots), thawed
- 1 can French fried onions (1 1/3 cups)
- 1/2 cup shredded Swiss cheese
Lazy Day Salsa

Add onion, jalapeno and garlic to the bowl of a food processor
- 1/4 1/4 1/4 medium white onion, peeled
- 2 2 1 tablespoons diced jalapenos (from a can) OR 1 medium fresh jalapeno, stem removed and halved
- 2 2 2 cloves garlic, peeled
- 1 1 ounce) can 1 (14.5 ounce) can Hunt's fire roasted diced tomatoes with garlic
- 1/2 1/2 1/2 fresh lime, juiced
- 1/2 1/2 1/2 teaspoon kosher salt
- 2 2 2 tablespoons fresh cilantro
Saucy Beef Noodle Skillet

BROWN meat in large nonstick skillet on medium-high heat; drain
- 1 lb. extra lean ground beef
- 1 Green pepper, chopped
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1 cup Water
- 1/2 cup KRAFT Zesty Italian Dressing
- 2 pkg. (3 oz. each) ramen noodle soup mix, beef flavor
- 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
Cheesy Noodle Bake Crockpot

Mix softened cream cheese, sour cream, and cottage cheese in one bowl
- 6 oz egg noodles, cooked and drained (I used what was in my panty, curly noodles)
- 8 oz lean ground beef, cooked and drained
- 4 oz cream cheese
- 1/2 cup sour cream
- 1/2 cup cottage cheese
- 3 (8 oz) cans tomato sauce (or you can use one 26 oz can of spaghetti sauce and then omit the shirley J seasoning)
- 1 1/2 T Shirley J Pizza and Pasta Seasoning
Spring Vegetable and Quinoa Pilaf

Bring broth and 1/2 teaspoon sea salt to boil in medium saucepan; add quinoa
- 1 3/4 cups low-salt chicken broth
- 1/2 teaspoon coarse sea salt plus additional for seasoning
- 1 cup quinoa, rinsed and drained 3 times
- 6 baby golden beets, peeled, cut into 1/3-inch cubes
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 cup 1/2-inch pieces orange bell peppers
- 1 cup 1/2-inch pieces red bell peppers
- 1/2 pound asparagus, trimmed, cut on diagonal into 3/4-inch pieces
- 1 cup 1/2-inch pieces trimmed baby zucchini (about 6 ounces)
- Freshly ground black pepper
- 4 green onions, thinly sliced
- 1 tablespoon chopped fresh Italian parsley

- 8 (6-inch) corn tortillas
- 2 cups shredded cabbage
- Crema:
- 1/4 cup thinly sliced green onions
- 1/4 cup chopped fresh cilantro
- 3 tablespoons fat-free mayonnaise
- 3 tablespoons reduced-fat sour cream
- 1 teaspoon grated lime rind
- 1 1/2 teaspoons fresh lime juice
- 1/4 teaspoon salt
- 1 garlic clove, minced

- 1 tablespoon melted butter
- 1/2 medium chopped onion
- 1/4 cup melted butter
- 1/4 cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- 1/2 lb fresh broccoli (about 1 cup)
- 1 cup carrot, julienned
- 1/4 teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese
