Salmon Pasta with Spicy Tomato Sauce

Cook pasta in boiling water according to the package directions
- 8 ounces spinach fettuccine pasta
- 2 tablespoons plus 1 teaspoon olive oil
- 1 cup red onion, finely diced
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon dried oregano
- 1 salmon fillet (8 ounces)
- 1/4 teaspoon dried dill weed
- 1 pound roma tomatoes, peeled, seeded, and chopped
- 1/4 cup dry white wine
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Spaghettini with Garlic and Dried Chile

Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente
- 8 ounces spaghetti
- Kosher salt
- 3 tablespoons vegetable oil
- 1 tablespoon extra-virgin olive oil
- 3 large garlic cloves, lightly crushed
- 3 dried Calabrian peppers or chiles de árbol
- 4 tablespoons finely grated Parmesan Cheese
Baked Mighty Mac and Cheese

Cook pasta according to package directions
- 1-1/3 cups dried corkscrew pasta or elbow macaroni
- (about 5 ounces)
- 1/4 cup nonfat dry milk powder
- 1/4 cup finely chopped onion
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1-1/2 cups milk
- 10 slices reduced-fat American cheese (7 ounces), torn
- 6 flavored crisp breadsticks, such as cheese or garlic,
- coarsely crushed (1 ounce total)
Pasta Tossed with Brie, Tomatoes and Basil

Combine tomatoes, brie, basil, garlic, 1 cup olive oil, salt and pepper in a large serving bowl
- 4 ripe tomatoes, cut into 1/2 inch cubes
- 1 pound Brie cheese, rind removed, torn into irregular pieces
- 1 cup cleaned fresh basil leaves, cut into strips
- 3 garlic cloves, peeled and finely minced
- 1 cup best quality olive oil
- Salt to taste
- 1/2 tsp freshly ground pepper
- 1 1/2 pounds angel hair (or other spaghetti/linguini)
- Freshly grated imported Parmesan cheese (optional)
Jack Daniel's Fudge

Whisk whiskey with confectioner’s sugar, and set aside
- 5 cups sugar(2 pounds)
- 2 sticks unsalted butter
- 1 cup whole milk
- 1 1/2 teaspoons of vanilla
- 25 large marshmallows, ripped in half
- 11.5 oz Ghiradelli 60% cocoa bittersweet chocolate chips
- 2 1/2 cups powdered sugar
- 3/4 cup Jack Daniels, or any whiskey
Crockpot Goulash with Noodles

Put steak cubes, onion and garlic in crock-pot
- 2 lb. round steaks, cut in 1/2-in. cubes
- 1 cup onion; chopped
- 1 garlic clove, minced
- 2 tbsp. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 tsp. paprika
- 1/4 tsp. thyme, dried and crushed
- 1 (14 1/2 oz.) can tomatoes
- 1 cup sour cream
- Noodles, cooked
5-Minute Microwave Cheesecake

- 1 tablespoon butter
- 2 sheets graham cracker
- 4 oz cream cheese, softened
- 2 tablespoons sugar
- 3 drops vanilla extract

Chicken Stir Fry with Rice Noodles

Bring medium size pan of salted water to a boil
- 12 oz rice noodles
- 3 tablespoons vegetable oil
- 2 skinless boneless chicken breasts, sliced into bite-size strips
- Salt and black pepper to taste
- 1 red bell pepper (or 1/2 red and 1/2 green), sliced
- 1 cup broccoli, chopped
- 4 oz shiitake or portobello mushroom, sliced
- 1 tablespoon peeled and shredded fresh ginger
- 1/2 cup chicken broth
- 2 tablespoons soy sauce (NOT low-sodium*)
- 2 tablespoons ketchup
- 1 teaspoon cornstarch
- few drizzles of sesame oil
Creole French Fries

Preheat oil to 375 degrees F
- Maple Mustard Sauce:
- 4 large Idaho potatoes
- Peanut oil, for frying
- Creole pepper seasoning
- 1/4 cup prepared yellow mustard
- 1/2 cup prepared stone ground mustard
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1/4 tablespoons rice wine vinegar
- Whisk all ingredients together and serve.
- Yields: 1 cup
