Chicken Noodle Bake

1.Preheat oven to 350°F. 2
- 12 ounces egg noodles
- 5 cups chopped cooked chicken
- 2 (10-ounce) cans cream of chicken soup
- 1/2 cup frozen chopped onion
- 1/2 cup frozen chopped green bell pepper
- 1/2 cup chopped roasted red bell pepper
- 1 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1/3 cup grated Parmesan cheese
Churro Popcorn

In a small bowl, mix together all the ingredients for the churro sugar coating and set aside
- 1/3 cup popcorn kernels
- 1/2 cup butter
- 2/3 cup granulated sugar
- 3 tbsp cinnamon
- 2 tbsp light corn syrup
- 1/4 tbsp vanilla extract
- Churro Sugar Coating
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 1 and 1/2 tsp cinnamon
Garlic Potato Balls

Preheat your oven to 400 degrees
- 1 bulb garlic
- 1 tablespoon butter
- 1 teaspoon lemon juice
- kosher salt
- 2 cups leftover stiff mashed potatoes (room temperature)
- 2/3 cup freshly shredded cheese
- 3 eggs
- 1/2 to 1 cup plain bread crumbs
- 1/2 tp 1 cup Panko bread crumbs
- oil for frying
Chicken Fiesta Ranch Pasta Bake

Cook pasta according to package; drain
- 1 box (16 oz.) penne (or similar sized) pasta
- 2 jars (16 oz. each) Alfredo sauce
- 1 packet (1.1 oz.) Hidden Valley® Fiesta Ranch Dips Mix
- 2 cups cubed, cooked chicken
- 1 can (15 oz.) black beans, drained and rinsed
- 2 cups (8 oz.) Monterey Jack cheese, shredded
- Sliced green onions for garnish, optional
Fish Tacos with Fish Taco Sauce

Line large baking sheet with parchment or silicone liner
- Fish Taco Ingredients:
- 24 24 24 small white corn tortillas
- 1 1/2 1 1/2 1/2 lb tilapia
- 1/2 1/2 1/2 tsp ground cumin
- 1/2 1/2 1/2 tsp cayenne pepper
- 1 1 1 tsp salt
- 1/4 1/4 1/4 tsp black pepper
- 1 1 1 Tbsp Olive oil
- 1 1 1 Tbsp Butter
- Fish Taco Toppings:
- 1/2 1/2 1/2 small purple cabbage
- 2 2 2 medium avocado sliced
- 2 2 2 roma tomatoes diced (optional)
- 1/2 1/2 1/2 diced red onion
- 1/2 1/2 1/2 bunch Cilantro longer stems removed
- 4 4 1 oz 1 cup Cotija cheese, grated
- 1 1 8 to cut into 8 wedges to serve
- Fish Taco Sauce Ingredients:
- 1/2 1/2 1/2 cup sour cream
- 1/3 1/3 1/3 cup Mayo
- 2 2 1 Tbsp lime juice from 1 medium lime
- 1 1 1 tsp garlic powder
- 1 1 to tsp Sriracha sauce or to taste
Parmesan Garlic Potatoes

Pour melted butter into a baking dish, and sprinkle with garlic powder, garlic salt and Parmesan cheese
- 6 tablespoons melted butter
- 1 teaspoon garlic powder
- 1/4 teaspoon garlic salt
- 5 tablespoons grated Parmesan cheese
- 6 large peeled and sliced potatoes
Easy Loaded Spaghetti

Fry onions, red pepper and garlic in one tablespoon olive oil until onions are clear
- 12 ounces whole wheat spaghetti or linguini
- 2 tablespoons capers
- 5 medium tomatoes, blanched peeled and mashed
- 1 medium onion, chopped
- 1/2 red pepper, chopped
- 20 basil leaves, shredded
- 6 cloves garlic, chopped
- 3 tablespoons tomato paste
- 8 whole black pitted olives
- 1/2 cup black olives, sliced
- 2 tablespoons olive oil
- 1 or 2 tablespoons basil pesto
- 1/4 cup water
- reduced fat Parmesan cheese
- Black pepper, ground
Eclair Icebox Cake

In a large bowl whisk the pudding with the milk
- 2 small boxes of instant french vanilla pudding
- 3 cups cold milk (I used skim)
- 1 (8oz) tub cool whip
- 1 box (3 sleeves) graham crackers
- 6 Tbsp butter, room temperature
- 4 Tbsp milk
- 1 tsp vanilla
- 6 Tbsp unsweetened cocoa
- 1 1/2 cups powdered sugar
Chicken Fried Rice

In large skillet, sauté rice-vermicelli mix with 2 Tbsp
- 1 package RICE-A-RONI® Fried Rice
- 1 pound uncooked, boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons margarine
- 1 1/2 cups water
- 2 beaten eggs
- 1 cup frozen peas (optional)

- 2 1/2 cups uncooked white rice
- 3 large eggs
- 1 medium onion, diced
- 1/4 cup low sodium soy sauce
- 1/8 tsp. pepper
- 2 tbsp. vegetable oil
