Chocolate Pots de Creme

1. Position a rack in the middle of the oven and heat the oven to 325°F
- 6.5 ounces 72% bittersweet chocolate, finely chopped
- 1 1/4 cups (10 ounces) heavy cream
- 3/4 cup (6 ounces) whole milk
- 5 large egg yolks
- 2/3 cup (4.5 ounces) sugar
- 2 teaspoons vanilla bean paste
Chocolate Zucchini Cake

Preheat oven to 325° (for a glass pan) or 350° (for a metal pan)
- 1/2 Cup margarine or butter (1 stick), room temperature
- 13/4 Cups sugar
- 1/2 Cup oil
- 2 eggs
- 1 tsp. PURE VANILLA EXTRACT
- 1/2 Cup buttermilk or sour milk (1/2 Cup milk plus 1 tsp. white vinegar = sour milk)
- 21/2 Cups flour
- 4 TB. COCOA POWDER
- 1 tsp. baking soda
- 1/2 tsp. CINNAMON
- 1/2 tsp. salt
- 2 Cups grated zucchini, peeled if desired, drained (about 2 medium)
- 12 oz. semi-sweet chocolate chips
- 1/2 Cup chopped pecans or walnuts
Bourbon Dogs

Combine all ingredients except hot dogs in a medium-size, oven-safe pan
- 1/3 cup ketchup
- 1/3 cup brown sugar, packed
- 1/4 cup barbecue sauce
- 1/2 cup bourbon
- 8 hot dogs, cut into thirds on a bias
Spicy Drunken Noodles

Mix the sauce together in a small bowl
- The Sauce:
- 1/4 cup oyster sauce
- 1/4 cup fish sauce
- 2 Tb. fresh lime juice
- 2 Tb. soy sauce
- 2 Tb. brown sugar
- The Noodles:
- 1 lb. Egg Noodles (or rice noodles)
- 1 lb. chicken breast, sliced into thin bite-size pieces
- 3 eggs, beaten
- 1 small onion, peeled and chopped
- 4 cloves garlic, minced
- 1 –3 Thai chiles (or 1–2 jalapeños)-I used two Hawaiian chili peppers and they were nice and hot
- 1 cup shredded carrots
- 1 cup red bell pepper, seeded and sliced thin
- 1 cup grape tomatoes, halved
- 1 cup, loose Thai basil leaves
- 1 cup green onion tops, cut into 1 inch pieces
- Coconut oil for cooking

Line two baking sheets or large platters with parchment paper
- 8 ounces pecan halves (I used roasted, lightly salted)
- 25 caramel squares, unwrapped (about 1 heaping cup)
- 1/4 cup cream or half-and-half
