Teriyaki Summer Vegetable Packets

Heat grill. Cut four 18x12-inch pieces of Heavy Duty Foil
- 2 cups fresh baby carrots
- 2 cups frozen sugar snap peas
- 1 red bell pepper, cut into 8 lengthwise wedges
- 1/4 cup purchased teriyaki baste and glaze
- 1/8 teaspoon ginger
- 1/4 cup chopped fresh cilantro
Kiwi Chocolate Cups

In microwave safe bowl, combine both ingredients
- 6 oz semisweet chocolate chips
- 1 Tbls shortening
- 4 small (or 3 large) kiwi
- 2 Tbls. sugar
- 1 C. heavy cream
- 1/4 tsp. vanilla extract
- 1/2 C. powdered sugar
- Green food coloring (optional)
FIVE MINUTE MICROWAVE FUDGE

Line an 8 x 8-inch pan with aluminum foil or parchment paper
- 16 ounces Dark Chocolate
- 1/4 cup Medium Dark Cocoa powder
- 1/2 teaspoon baking soda
- 1 (14oz) can sweetened condensed milk
- 1 tablespoon Madagascar vanilla extract or other quality vanilla extract
- 1 cup chopped walnuts
3-Ingredient Baked Ham and Cheese Rollups

Preheat oven to 400 degrees F
- Optional:
- 1 ball pizza dough
- 8 oz. thinly sliced deli ham
- 1 cup shredded mozzarella cheese
- Fresh parsley, for sprinkling
- Mustard or horseradish sauce, for serving
Chocolate Buttercream Frosting /Icing

Using a hand mixer or stand mixer, beat the butter until fluffy and very pale in color, about 3-5 minutes
- 3/4 cup unsalted butter – softened – 12 Tablespoons
- 3 cups powdered sugar – sifted (sift after measuring)
- 1 cup unsweetened cocoa powder – sifted (sift after measuring)
- 7-8 Tbs. milk – room temp
- 1 1/2 tsp. pure vanilla extract
Potato-Corn Chowder

Combine soup and corn in a 2-quart slow cooker; add bacon and bacon drippings, if desired
- 2 10-3/4 oz. cans potato soup
- 2 14-3/4 oz. cans cream-style corn
- 8 slices bacon, crisply cooked and crumbled
- salt, pepper and garlic salt to taste
- Optional: 1 to 2 T. bacon drippings,
- 1/2 to 1 c. milk
- Garnish; fresh parsley, chopped
Patriotic Gelatin and Berry Fluff

Prepare gelatin as directed, pour each gelatin into separate square aluminum pans, chill until set
- 12 oz. container whipped topping
- 1 pint fresh strawberries-quartered (reserve enough for topping)
- 1 pint blueberries
- 1 3 oz pkg. strawberry gelatin
- 1 3 oz.pkg. berry blue gelatin
- Red,white and blue sprinkles
