In a large pot over high heat, combine all ingredients except Parmesan cheese; bring to a boil
- 4 cups beef broth
- 1 (28-ounce) can crushed tomatoes
- 2 cups frozen chopped broccoli
- 2 cups frozen sliced carrots
- 1 cup frozen chopped spinach
- 1 cup frozen peas
- 1 cup frozen corn
- 1/2 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Grated Parmesan cheese for sprinkling
Tempeh Piccata with Kale and Whole-Wheat Spaghetti

- 1 Tbsp olive oil
- 16 oz tempeh, cut into 16 triangles (wild-rice variety recommended)
- 1/4 cup(s) fresh lemon juice, squeezed from 2 lemons
- 1 Tbsp lemon zest
- 1/2 cup(s) vegetable broth, or water
- 1 Tbsp capers, small
- 1/4 tsp table salt
- 1/4 tsp black pepper, freshly ground
- 1 Tbsp arrowroot powder
- 1/4 cup(s) fresh parsley, fresh, chopped
- 1 spray(s) cooking spray
- 1 small uncooked onion(s), chopped (about 1/3 cup)
- 8 cup(s) uncooked kale, fresh, chopped (about 2 bunches)
- 2 cup(s) cooked whole-wheat spaghetti, kept hot
Lemon Parmesan Foil-Pack Broccoli

Heat gas or charcoal grill to medium-high heat
- 1 bag (12 oz) frozen broccoli florets
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons shredded Parmesan cheese
Texas Sheet Cake

Preheat oven to 350 F. Grease and flour a 10×15-inch sheet pan (like a jelly roll pan or cookie sheet with sides)
- Icing:
- 2 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 2 eggs
- 1 cup butter
- 1 cup water
- 5 tablespoons unsweetened cocoa powder
- 6 tablespoons milk
- 5 tablespoons unsweetened cocoa powder
- 1/2 cup butter
- 4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts or pecans

Shake It, Bake It: Combine all ingredients in a large re-sealable plastic bag
- Shake It, Bake It:
- 4 cups dry bread crumbs
- 1/3 cup vegetable oil
- 1 tablespoon salt
- 1 tablespoon paprika
- 1 tablespoon celery salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon garlic salt
- 1/2 teaspoon minced garlic

Betty's Tater Tot Casserole

Spray a 13x9x2 inch baking dish with cooking oil spray (or grease with butter or oil)
- 1 (32 oz.0 package frozen Tater Tots (These are pre-cooked, formed potato nuggets.)
- 1 (16 oz.) container sour cream, regular or fat free
- 1 cup shredded Cheddar cheese
- 1 (10.75 oz.) can condensed cream of mushroom soup or any condensed cream soup of choice
- 3/4 cup sliced green onions
- 1 can of potato sticks, crushed potato chips, dried french fried onions or cooked bacon-crumbled
- Cooking oil spray (for greasing baking dish—you may use butter or oil.)

Easy Chocolate Covered Peanut Butter Bars
