CHERRY VANILLA OATMEAL COOKIES

Tastes so great in the morning with coffee or hot chocolate
- 3/4 cup (1 1/2 sticks) salted butter, softened
- 3/4 cup brown sugar
- 3/4 cup regular white sugar
- 3/4 cup flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 3 cups rolled oats
- 3/4 cups dried cherries, or cranberries
AUTUMN VEGETABLE SOUP

Besides their clear health benefits, vegetable soups are the perfect canvas for what's in season
- 2 tablespoons olive oil
- 3 medium carrots, cut into chunks
- 1 large onion, cut into medium dice
- 2 medium cloves garlic, minced
- 2 cups 1/2 cubed, peeled butternut squash (2-lb)
- 1/4 teaspoon ground allspice
- pinch of cayenne pepper
- Kosher salt
- 1 quart low salt chicken broth
- 1 14.5 oz can no salt added diced tomatoes
- 4 sprigs fresh thyme
- 2 cups lightly packed, coarsley chopped kale
- 1 cup low salt canned chick peas
MARINEL'S TOMATO TART

This is so good with fresh tomatoes from the garden
- 1/2 package of pie crust (pillsbury)
- 2 cups (8 oz) mozzarella cheese, shredded
- 3 tablespoons basil, chopped
- 3 medium ripe tomatoes, cut into 1/2 thick slices
- 1 1/2 tablespoons olive oil (garlic infused)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
CHOCOLATE FUDGE WITH WALNUTS

This is delicious Fudge. It reminds me of Fannie May Fudge
- 1 - 12 oz can Evaporated Milk
- 1/2 lb butter
- 1 cup brown sugar, firmly packed
- 3 1/4 cups marshmallows
- 13 oz Hershey milk chocolate candy
- 12 oz package Semi-Sweet chocolate
- 2 oz Bakers bitter-sweet chocolate
- 2 cups walnuts, coarsley chopped
- 1 tablespoon Vanilla
STICKY ORANGE GLAZED CHICKEN THIGHS

To serve a crowd, try this sweet glaze on 4 pounds of chicken wings
- 8 bone-in skin on chicken thighs
- Coarse salt and ground pepper
- 1 cup thawed orange juice concentrate
- 1 cup ketchup
- 2 tablespoon light-brown sugar
- 4 teaspoons white-wine vinegar
- 4 teaspoons Worcestershire sauce
- 2 teaspoons hot sauce
AVANTI GRILLED CHICKEN CAESAR SALAD

A lovely lunch or dinner entree
- 2 boneless chicken breasts
- 2 heads romaine lettuce
- 3 cloves of garlic
- 2 filets of anchovies
- 1 egg yolk, hardboiled
- 1 teaspoon Worcestershire sauce
- 4 tablespoons virgin olive-oil
- 4 tablespoons Dijon mustard
- 1 medium lemon (juice only)
- 1/2 cup cheese croutons
- 1 ounce Parmesan cheese
- salt and pepper, to taste
BRUSSELS SPROUTS WITH VINEGAR GLAZED RED ONIONS

The sweetness of the onions is a nice contrast to the strong taste of the brussels sprouts
- 1 (about 10) basket of brussels sprouts
- Salt and freshly ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 small red onion, thinly sliced
- 2 tablespoons balsamic vinegar
SHRIMP PENNE A LA VODKA

This was sooo good. Lots of compliments from the family
- 2 teaspoons olive oil
- 1 large onion, thinly sliced
- 2 garlic cloves
- 1 tablespoon oregano, minced
- 1 tablespoon thyme, minced
- 2 tablespoons basil, chopped finely
- 4 large tomatoes finely chopped
- 1/2 cup of vodka
- 1 cup heavy cream
- 1 LB medium shrimp, peeled and deveined
- salt and freshly ground pepper to taste
- 1 LB penne pasta, cooked according to package directions, rinsed and kept warm
PEACH TURNOVERS

- 2 tablespoons granulated sugar
- 1 tablespoon all purpose flour
- 1/8 tsp ground cinnamon
- 1 1/3 cups chopped, peeled peach, nectarine, or chopped peeled apple
- 1/2 of a 17.3 oz package frozen puff pastry sheets, thawed
- Milk
- Coarse sugar (optional)
- 3/4 cup powdered sugar
- 1 tablespoon butter, softened
- 1/2 teaspoon vanilla
- dash of salt
- 2 teaspoons milk
CHINESE SLAW

This is so fast and it is a great crunchy side dish
- 16 oz bagged cole slaw
- 1 package chicken ramen noodles, crumbled
- 3 Tablespoons sesame seeds
- 1/2 cup almonds, slivered
- DRESSING
- 1/2 canola oil or olive oil
- 1 tablespoon soy sauce
- 4 tablespoons seasoned rice vinegar
- 1/4 cup of sugar
- 1 package seasoning from chicken ramen soup
