Snap Pea Salad with Radish & Lime

Steam peas over 2 inches of boiling water, stirring once, until crisp-tender, 4 to 5 minutes
- 8 ounces sugar snap peas, trimmed and halved (about 2 cups)
- 7 ounces yellow wax beans, trimmed and cut into 1-inch pieces (about 3 cups)
- 3 tablespoons lime juice
- 2 tablespoons extra-virgin olive oil
- 1/2 cup chopped fresh cilantro
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 1 bunch radishes, trimmed and thinly sliced (about 10)

- 1/4 cup mayonnaise
- 1 tablespoon chopped shallots
- 1 1/2 tablespoons chopped and rinsed capers
- 2 teaspoons Creole mustard
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon ground red pepper
- 1/8 teaspoon kosher salt
SEARED PORK MEDALLIONS IN MARSALA-MUSHROOM SAUCE

This was a huge hit! Rich sauce
- 1 1/2 pounds Pork Tenderloin, (1 large or 2 small), trimmed of fat and cut on the diagonal into 1 1/2 inch rounds (about 8)
- Kosher salt and freshly ground pepper
- 1/2 cup unbleached all-purpose flour
- 2 tablespoons olive oil
- 1 tablespoons butter
- 1 large shallot, finely diced ( about 1/4 cup)
- 1 1/2 cups (1 oz) dried mushrooms, rehydrated and chopped, plus 3/4 cup soaking liquid (I used fresh mushrooms and chicken broth and it came out delish!)
- 1/3 cup Marsala wine
- 1/4 cup heavy cream
- 2 tablespoons chopped flat leaf parsley

- 12 manicotti shells
- 2 1/4 teaspoons salt
- 1 1/2 lbs cottage cheese
- 1/4 cup bread crumbs
- 1/2 cup grated Parmesan cheese

- 2 tablespoons salad oil
- 1 cup sliced onion
- 2 cloves minced garlic
- 1 can (16 ozs) diced or whole (crushed) tomatoes
