BROILED TILAPIA PARMESAN

This sauce goes really well on cod fillets also
- 2 tablespoons Parmesan cheese
- 1 tablespoon butter, softened
- 2 1/4 teaspoons mayonnaise
- 1 1/2 teaspoons fresh lemon juice
- 1/8 teaspoons dried basil
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon celery salt
- 1/2 pound tilapia or cod fillets
CREAMY CHICKEN AND MUSHROOM SKILLET

- 8 boneless skinless chicken thighs (I actually use any chicken I have on hand)
- 1/2 cup flour seasoned with salt and pepper
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 pound sliced mushrooms
- 1 large clove of garlic, chopped
- 1 1/2 cups white wine or chicken broth
- 1 heaping tablespoon of chopped thyme (or 2 teaspoons dry)
- 1/2 cup Asiago cheese (or other hard cheese like parmesan)
- 2 tablespoons Dijon mustard
- 1/2 cup cream
