ARTICHOKE CROSTINI

- 6 ounces Marinated artichoke heart, finely chopped
- 1/2 cup grated romano cheese
- 1/3 cup red onion, finely chopped
- 5 tablespoons mayonnaise
MORNING GLORY MUFFINS

Dense and moist and filling for breakfast
- 1/2 cup raisins
- 2 cups King Arthur whole wheat flour, traditional or white whole wheat
- 1 cup brown sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 2 cups carrots, peeled and grated
- 1 large tart apple, peeled, cored and grated
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped walnuts
- 1/3 cup sunflower seeds, or wheat germ
- 3 large eggs
- 2/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 1/4 cup orange juice
BLUEBERRY BREAKFAST SAUCE

- 1/2 cup sugar
- 1 tablespoon corn starch
- 1/3 cup water
- 2 cups fresh or frozen blueberries
WALDORF SALAD

For luncheon main dish add a cup or two of diced chicken
- 2 cups apples, diced
- 1 cup celery, chopped
- 1/2 cup walnuts
- 1/4 cup real mayonnaise
- 1 tablespoon sugar
- 1/2 teaspoon lemon juice
- dash of salt
- 1/2 cup heavy cream, whipped
BAVARIAN RED CABBAGE

Great side dish with Pork
- 1 large head of red cabbage, washed and coarsely sliced
- 6 tart apples, cored and quartered
- 2 medium onions coarsely chopped
- 2 teaspoons salt
- 3 tablespoons sugar
- 2 cups of hot water
- 6 tablespoons butter
- 2/3 cup cider vinegar
CHICKEN THIGHS WITH CHERRY SAUCE

Very Tasty, nice for company!
- 8 bone in chicken thighs, about 5 ozs each
- salt and pepper
- 2 tablespoons unsalted butter
- 2 tablespoons vegetable oil
- 3/4 cup all-purpose flour
- 1/2 cup dry white wine
- 1/2 cup low-sodium chicken broth
- 1/2 cup cherry preserves
- 1 16 oz can unsweetened tart cherries packed in water, drained
GAZPACHO

Lovely warm weather soup
- 4 cups tomato juice
- 1/2 cup finely chopped onion
- 1 clove garlic, minced
- 1 medium bell pepper, minced
- 2 teaspoons honey
- 1 medium cucumber, peeled seeded and minced
- 2 scallions, minced
- 1/2 lemon juiced
- 1 lime juiced
- 2 tablespoons red wine vinegar
- 1 tablespoon finely chopped basil
- 1/4 - 1/2 teaspoon cumin
- 1/4 cup minced fresh parsley
- 2 -3 tablespoons olive oil
- salt, to taste
- pepper, to taste
- cayenne, to taste
- 2 cups diced fresh tomatoes
ATOMIC TUNA SALAD

In a large bowl, toss together the tuna, broccoli, cauliflower, onion and celery
- 2 (6 ounce) cans tuna -- drained
- 1/2 head broccoli -- chopped
- 1/2 head cauliflower -- chopped
- 1/2 red onion -- chopped
- 2 stalks celery -- chopped
- 1 cup fat free mayonnaise
- 4 pita bread rounds
KISSES PEANUT BUTTER BLOSSOMS

Traditional Peanut Butter and Chocolate Cookie
- 48 Hershey's Kisses Chocolates
- 1/2 cup shortening
- 3/4 cup creamy peanut butter
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt

PANZANELLA

Lovely way to us up old bread, and all those cherry tomatoes from your garden
- 2 pounds of ripe tomatoes
- 1/4 cup finely chopped red onion
- 1/4 cup chopped flat-leaf parsley
- 3 tablespoons finely slivered fresh basil
- 4 cups torn bite-size pieces stale, crusty white bread
- 1/4 cup extra-virgin olive oil
- 3 tablespoons red-wine vinegar
- 1/2 teaspoon kosher or sea salt
- 1/4 teaspoon ground pepper
