If using vanilla bean, halve lengthwise
- 1 vanilla bean or 1 teaspoon vanilla extract
- 3 tablespoons honey, or more to taste
- 2 teaspoons lemon juice
- Pinch of salt
- 3 cups strawberries, hulled and quartered
- 2 cups part-skim ricotta cheese
- 2 tablespoons freshly grated lemon zest

- 1/2 cup mayonnaise

Roman-Style Braised Artichokes

Use the serrated knife to cut the artichokes into quarters
- 2 large globe artichokes
- 1 lemon
- 1/4 cup olive oil
- 3/4 cup sliced shallots
- 3 cloves garlic, minced, about 1 Tbsp
- 3 bay leaves
- 1 cup dry white wine (such as a Sauvignon blanc)
- 3/4 cup water
- 1 teaspoon salt
- 3 Tbsp chopped fresh parsley leaves
- 2 Tbsp chopped fresh mint leaves
EASY SOLE MEUNIERE

- 1/2 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- 4 fresh sole fillets, 3 to 4 ounces each

- 14 cups (1 inch) cubed peeled sweet potato (about 5 pounds)
- 1/2 cup 1/2 and 1/2
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 3/4 teaspoon salt
- 1 large egg, lightly beated
- cooking spray
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup chilled butter (1/2 stick) cut into small cubes
- 1/2 cup chopped pecans
