Santa Maria Tri-Tip

Combine the granulated garlic and pepper in a small bowl and set aside
- 2 tablespoons granulated garlic
- 1/3 cup fresh cracked black pepper
- 1/2 cup garlic cloves
- 3 tablespoons kosher salt
- 2 tablespoons sugar
- 2 tablespoons Achiote Oil, recipe follows
- 1 (3 to 4-pound) prime tri-tip roast
- 1 1/2 tablespoons achiote seeds
- 1/2 cup canola oil
SLOW-COOKER CLASSIC BEEF STEW

This stew is really "classic"
- 4 lbs chuck roast, well trimmed and cut into 2 in pieces
- 1 cup all-purpose flour
- 1/3 cup olive oil (plus more if needed)
- 2 large onions
- 1 6-ounce can tomato paste
- 1 cup dry red wine
- 1 pound potatoes, cut into wedges (about 4 cups)
- 1/2 pound baby carrots
- 2 cups beef broth
- 1 tablespoon kosher salt
- 1 teaspoon dried thyme leaves
- 1 bay leaf
CHANTAL'S NEW YORK CHEESECAKE

Classic and delicious
- 15 graham crackers, crushed
- 2 tablespoons of butter
- 4 (8 ounce) packages cream cheese
- 1 1/2 cups white sugar
- 3/4 cup milk
- 4 eggs
- 1 cup sour cream
- 1 tablespoon vanilla extract
- 1/4 cup all-purpose flour
CHILLY DILLY CUCUMBER SOUP*****

Very tasty cold soup. Make this when you have an abundance of cukes in the garden
- 4 cups reduced-sodium chicken broth
- 1 1/2 cups chopped peeled waxy, thin skinned potatoes (such as red or Yukon Gold, not russets)
- 1/2 cup chopped cauliflower or 1/2 cup additional chopped potatoes
- 1/2 cup chopped celery
- 1 large handful whole fresh dill sprigs (including stems), plus 1/4 cup coarsely chopped dill leaves, plus small sprigs for garnish
- 1 handful whole fresh chives, plus 1/4 cup coarsely chopped chives, plus more for garnish
- 1 tablespoon butter
- 1 1/4 cups finely diced seeded and peeled cucumber, plus thin half moon slices for garnish
- freshly ground pepper to taste
ASIAN GRILLED FLANK STEAK

Wonderfully flavorful, fast meal
- 2 tablespoons rice wine vinegar
- 1 1/2 tablespoons low sodium soy sauce
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon finely minced fresh ginger
- 1 clove finely minced garlic
- dash of red chili flakes
- 1/4 teaspoon fresh rosemary finely chopped
- 1/4 teaspoon sesame oil
- pinch of freshly ground black pepper
- 1 1/3 pounds flank steak
- salt and pepper
CUCUMBER SALAD

Great when the garden is giving you lots of cucumbers
- 2 tablespoons canola oil
- 1 tablespoon rice vinegar
- 3/4 teaspoon toasted sesame oil
- 1/4 pinch of ground black pepper
- 1/4 teaspoon re-pepper flakes
- 1/8 teaspoon sugar
- 1 English cucumber, unpeeled and thinly sliced
- 3 scallions, thinly sliced across
PORK CHOPS WITH APPLES AND SHALLOTS

You can replace the white wine with apple cider, if you prefer
- 2 tablespoons of butter
- 1/2 pound medium shallots, halved or quartered lengwise (pieces should be about 3/4 inch thick).
- 2 Granny Smith apples, peeled, cored and cut into eigths.
- 1/2 cup white wine
- 4 pork rib chops, (each 1/2 inch thick and 6 to 8 ounces).
- coarse salt and ground pepper
QUICK BARBEQUE SAUCE

This is so simple, and it does taste like BONE SUCKIN' SAUCE
- 3/4 cup ketchup
- 2 tablespoons light-brown sugar
- 1 tablespoon white wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons paprika
- 1/4 to 1/2 teaspoon cayenne pepper (optional)
SHRIMP, HAM, PENNE PASTA SALAD WITH DILLED VINAIGRETTE

This is a crowd pleaser. Holds up well for a couple of days
- 8 ounces penne or rotini pasta
- 1/2 pound cooked, diced shrimp
- 1/2 pound ham steak, cooked and julienned
- 2 hard cook eggs, chopped
- 1 small red onion, thinly sliced
- 1/2 cup sliced ripe olives
- 1 cucumber, peeled and seeded, and sliced
- 1 recipe dill vinaigrette
BUTTERNUT SQUASH SOUP WITH PARMESAN CROUTONS

Nice, flavorful soup. However, needs more liquid after it is pureed
- CROUTONS:
- 1 medium butternut squash, (about 3 lbs), peeled, sedded and cut into 1 inch cubes
- 2 Tbsp. olive oil, divided
- 1/4 tsp. pepper
- 1 large onion, chopped
- 3 celery ribs, chopped
- 2 Tbsp. minced fresh sage or 1 tsp rubbed sage
- 3 cans (14 1/2 oz each) reduced sodium chicken broth
- 1 32 oz box of chicken broth (optional)
- 2 Tbsp. grated Parmesan cheese
- 2 Tbsp. olive oil
- 1 Tbsp. minced fresh sage or 1/2 tsp. rubbed sage
- 2 garlic cloves, minced
- 2 cups cubed French bread (1/2 in cubes)
- cooking spray
- Additional grated Parmesan cheese, optional
