- SAUTEED MAPLE SYRUP APPLES:
- 15 tablespoons unsalted butter
- 3/4 pound chicken livers, rinsed and drained

- 1/3 cup chopped scallions, white and pale-green parts only, about 3 scallions
- 1 tablespoon minced garlic, 2 to 3 cloves
- 1/2 teaspoon paprika
- coarse salt to taste
- 1/3 cup white wine
- 1 teaspoon fresh thyme
- 1 loaf crusty bread, for serving

- 2 juicy, sweet tart apples, such as Jonathan, peeled and cut into 12 wedges each, total of 24 wedges

- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 teaspoons minced garlic
- 2 tablespoons vegetable oil
- 2 1/2 cups water
- 2 tomatoes, diced
- 1 (14.5 ounce) can peeled and diced tomatoes with juice
- 1 (10.75 ounce) can chicken broth
- 1/4 cup uncooked barley
- 1/8 teaspoon ground black pepper
YUMMY BEAN SALAD

This is a great salad to serve with almost any meat, grilled or roasted
- 1-15 oz can chick peas, drained and rinsed
- 1-15 oz can red kidney beans, drained and rinsed
- 1 cup blanched green beans, cut into 1/2 inch pieces
- 4 chopped scallions, or 2 chopped scallions and 1/2 red onion
- 2 stalks of celery, cut into 1/2 inch pieces
- 1/2 apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- 1/2 teaspoon dry mustard
- 2 teaspoons minced garlic
- 1/4 teaspoon fresh ground black pepper
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt, optional
