THE ULTIMATE LEMON BUTTER BAR

- SHORTBREAD BASE
- 1/2 cup (1 stick) unsalted butter, chilled
- 2 tablespoons each: confectioners' sugar, granulated sugar
- 1 1/4 cups flour
- LEMON CURD TOPPING
- 4 large egg yolks
- 3/4 cup granulated sugar
- 6 tablespoons lemon juice
- 4 tablespoons unsalted butter, softened
- pinch of salt
- 2 teaspoons finely grated lemon rind
- 2 tablespoons confectioners' sugar
NEW POTATO SALAD

I loved the crunchyness of this salad
- 2 lbs of yukon gold or red potatoes, (you can leave the peel on if you want) cut into 1-inch pieces. I cooked the potatoes first, whole, and then cut them up.
- 3/4 cup sour cream
- 1/4 cup mayonnaise
- 2 teaspoons mustard (your favorite, yellow, dijon, stone ground)
- 1/2 cup thinly sliced green onions
- 1/2 cup chopped celery
- 1/4 cup chopped parsley
- 2 dill pickles, chopped into 1/4 inch cubes (about 3/4 cup)
- 6 slices bacon, cook and finely chopped
- coarse salt
- freshly ground pepper
ROASTED RACK OF LAMB

Wonderful, classic way to make a delicious rack
- 1/2 cup fresh bread crumbs
- 2 tablespoons minced garlic
- 2 tablespoons chopped fresh rosemary
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 (7 bone) rack of lamb, trimmed and frenched
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
SEASONED TURKEY BURGERS

A turkey burger seasoned with onion soup mix, pepper, and soy sauce
- 1 1/2 pounds ground turkey breast
- 1 (1 oz) package dry onion soup mix
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1 1/2 tablespoons soy sauce
- 1 egg, lightly beated (optional)
- 6 hamburger buns, split
SAUSAGE, POTATOES AND SAUERKRAUT SUPPER

A very tasty, one pot meal
- 1 20 ounce package refrigerated diced potatoes with onions
- 1 cup chopped green bell pepper
- 1 cup chopped carrot
- 1 1/2 pounds cooked smoked Polish sausage, or Smoked sausage, cut into 2-inch pieces
- 2/3 cup apple juice or apple cider
- 1 tablespoon cider vinegar
- 1/2 teaspoon caraway seeds
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 14 to 16 ounce can sauerkraut, drained
MEATLOAF GRAVY

This stand alone gravy needs no juice from the meatloaf
- 1 . 2 tablespoons of butter
- 2 . 4 shallots, minced
- 3 . 1 sprig of thyme
- 4 . 1 bay leaf
- 5 . dash of crushed peppercorns
- 6 . 1/4 cup chopped red bell pepper
- 7 . 1/4 cup chopped yellow bell pepper
- 8 . 1 cup white wine
- 9 . 1 cup veal or beef stock
- 10 . 1 cup chicken stock
- 11 . 2 roma tomatoes, diced (peeled seeded)
- 12 . salt and pepper to taste
CLASSIC GREEK SALAD

Perfect salad with all most anything
- 1 small red onion, halved and thinly sliced
- Kosher salt
- 1/4 cup red wine vinegar
- Grated zest and juice of 1 lemon
- 1 teaspoon of honey
- 1 teaspoon dried oregano
- Freshly ground pepper
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 12 to 14 small vine-ripened tomatoes, quartered
- 1 cup kalamata olives, halved and pitted
- 5 Persian cucumbers
- 1 4 oz block of Greek Feta cheese, packed in brine
- Fresh oregano leaves, for topping (optional)
SPICY TOMATO JAM

Nice on toast, brie with crackers
- 1 pound ripe cherry tomatoes, about 3 cups
- 4 tablespoons sugar
- 4 tablespoons light brown sugar, packed
- 2 tablespoons grated fresh ginger
- 1/2 lemon, sliced into thin half moons
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cloves
- 2 tablespoons cider vinegar
- salt and cayenne pepper
SHRIMP SALAD RECIPE

Wonderfully cool and tasty on a warm summer evening
- 2 1/3 cups uncooked small pasta shells
- 1/3 pound cooed salad shrimp
- 3 celery ribs, chopped
- 1 small onion, chopped
- 4 radishes, halved and sliced
- 4 hard cooked eggs, chopped
- 1 cup mayonnaise
- 1 tablespoon prepared mustard
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
SLOW-COOKER BEEF, BACON AND BARLEY SOUP

- 4 slices bacon, cut into 1/2-pieces
- 1 1/2 pounds boneless beef round steak cut into 1/2 inch pieces
- 1 medium onion chopped (1/2) cup
- 4 small red potatoes unpeeled, cut into 1/2 inch cubes (about 2 cups)
- 1 1/2 cups fresh baby carrots cut in half lengthwise
- 1 cup Green Giant Niblets Frozen corn
- 1/2 cup uncooked regular pearl barley
- 2 (14 oz) cans beef broth
- 1 (14.5 oz) can diced tomatoes with basil garlic and oregano, undrained
- 1 (12 oz jar) beef gravy
