  • 1 CUP QUICK OR OLD-FASHIONED ROLLED OATS
  • 1 TSP BAKING POWDER
  • 1/2 CUP SOFTENED BUTTER
  • 1 TSP VANILLA
  • 1 EGG
  • 1 1/4 CUP FLAKED COCONUT

Step 1

STIR TOGETHER FLOUR, BAKING POWDER, AND SODA; SET ASIDE. IN LARGE BOWL, CREAM BUTTER, BROWN SUGAR, VANILLA, SALT, AND EGGS UNTIL FLUFFY. STIR IN OATS, COCONUT, AND FLOUR MIXTURE UNTIL WELL BLENDED. CHILL SEVERAL HOURS, OR UNTIL FIRM ENOUGH TO HANDLE.

SHAPE IN 1 INCH BALLS. PLACE 2 INCHES APART ON LIGHTLY GREASED COOKIE SHEETS. DIP FORK TINES IN FLOUR AND PRESS CRISSCROSS PATTERN ON BALLS, FLATTENING TO MAKE 1 1/2 INCH ROUND COOKIES. BAKE AT 375 DEGREES FOR 10 MINUTES OR UNTIL BROWN. REMOVE TO RACK TO COOL. STORE LOOSELY COVERED IN COOL, DRY PLACE. MAKES 60.
