Roasted Five-Spice Carrots

- Ingredients:
- 1-1/2 lbs fresh carrots
- 1 tablespoon toasted sesame or vegetable oil
- 1 tablespoon butter, melted
- 1 tablespoon sugar
- 1-1/2 teaspoons Chinese five-spice powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Spinach Bean Dip Recipe

Thaw spinach in microwave or on stove and squeeze out the excess water
- 3 c. frozen loose leaf spinach
- 1 15 oz can garbanzo beans
- 1 lemon, juiced
- 3 tbs olive oil
- 1 tsp cumin
- 1/2 tsp salt
Sauteed Squash

Melt butter in large skillet
- 4 med summer squash, sliced
- 1 tab butter
- 1 tab olive oil
- 1 med onion, thinly sliced
- Salt & pepper to taste
Salmon Enchiladas

Poach salmon in large saute pan (just until pink)
- 8-10 soft corn tortillas
- 2 cups lightly poached and flaked Salmon (skin removed)
- 1 can black beans (rinsed and drained)
- 1-cup light sour cream
- 2 cups shredded Monterey jack cheese
- 1 cup softened goat cheese
- 1 cups light cream
- 1 can chopped green chilies
- 1 small red onion (chopped fine)
- 1 cup black olives
- 1 cup chopped cilantro
- 1 tsp ground cumin
- 1 tsp salt
Famous Buttermilk Cornbread

Preheat oven to 375 degrees
- 1/2 c. butter
- 2/3 c. sugar
- 2 eggs
- 1 c. buttermilk
- 1/2 tsp baking soda
- 1 c. cornmeal
- 1 c. flour
- 1/2 tsp salt
Roasted Chicken Thighs with Winter Squash

Bring a small pot of salted water to a boil
- 1 lemon
- 4 bone-in, skin-on chicken thighs oil
- 1 tsp sage
- 1 1/2 tsp coriander seed
- Salt and pepper
- 1/4 c. maple syrup
- 3 tbs butter
- 1/2 tsp chili powder
- 1 acorn squash seeded and sliced into 1/4” rings
- 1/4 c. sliced gr onions
Roasted Corn and Garlic Couscous

Preheat oven to 400 degrees F
- Cooking spray
- 4 garlic cloves, peeled
- 4 ears fresh corn on the cob or about 2 cups frozen whole kernel corn
- 1/4 teaspoon salt
- 1 1/2 cups reduced-sodium chicken broth
- 1 cup uncooked couscous
- 1/4 cup chopped green onions
- 2 tablespoons chopped pimento
Pork Chop with Black Beans

Trim the fat from meat. Rub chops with pepper
- 4 pork chops, 3/4” thick
- 1/8 tsp pepper
- 1 tbs oil
- 1 15oz can black beans, drained & rinsed
- 1 c. salsa
- 1 tbs chopped fresh cilantro
Grilled Eggplant & Tomato Stacks

Pill eggplant if desired then cut into 6 1/2 inch rounds
- olive olive
- 1 med eggplant(1 lb), cut into 6 1/2 inch thick rounds
- salt
- 6 tsp prepared pesto
- 2 lg beefsteak tomatoes, each cut into about 1/2 inch slices
- 4 oz mozzarella, cut into 6 thin slices
- 6 fresh basil leaves
Buttermilk Cornbread

- 1 c. cornmeal
- 1 c. whole wheat flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 2 tbs sugar
- 1 tbs oil
- 1 egg
- 2 c. buttermilk
