Whole-Wheat Orzo Salad with Broccoli-Pine Nut Pesto

Bring a large pot of water to a boil
- Fine-grained sea salt
- 1 1/2 c. whole-wheat orzo
- 5 c. broccoli florets and thinly sliced stems
- 2 cloves garlic, peeled
- 2/3 c. pine nuts, toasted
- 1/3 c. freshly grated Parmesan cheese
- Grated zest and juice of 1 lemon
- 1/4 c. extra-virgin olive oil
- 1/4 c. creme fraiche
- 1 ripe avocado, peeled, pitted, and sliced
Gingered Beef and Broccoli Salad Bowl

Barley Mushroom Soup

- 1/3 to 2/3 cup barley
- 8 cups water or stock
- 1 tsp salt (optional)
- 2 tsp oil
- 3 cups chopped mushrooms (about 1/2 lb.)
- 1 leek (or 1 sm onion), chopped
- 1 med. carrot, chopped
- 3 TBS nutritional yeast
- garlic, pepper, soy sauce to taste, 1/2 tsp each marjoram, savory.
- parsley for garnish.
Tuna Bread Salad

- 1 cup halved cherry tomatoes
- Kosher salt and freshly ground black pepper
- 1 cup cooked great Northern white beans
- 1 (5 to 6-ounce) can light tuna, packed in oil, drained
- 1 shallot, thinly sliced
- 1/4 cup sliced pitted kalamata olives
- 1/2 long baguette, cut into cubes (slightly stale works great)
- 2 teaspoons Dijon mustard
- 1 tablespoon balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons roughly chopped fresh basil leaves (or oregano)
