Black Bean Hummus

Puree all ingredients adding water if needed
- 1 15 oz czn bolackbeans
- 1 clove garlic
- 2 tbs lemon juice
- 2 tbs tahini
- 1 tsp cumin
Tropical Salad

Arrange avocado, papaya, and cantaloupe on a plate
- 3 slices chilled Hass avocado
- 3 slices chilled papaya
- 3 slices chilled cantaloupe
- 2 teaspoons fresh lemon juice
- Basil
Oven Baked Fried Chicken

Preheat oven to 400 degrees F
- Cooking spray
- 2/3 cup instant oats
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon mustard powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 (4-ounce) boneless skinless chicken breast halves
- 2 tablespoons Dijon mustard
- 2 cups frozen green peas, steamed or microwaved until hot
Chicken with Green Curry Sauce

Season both sides of chicken with salt and black pepper
- 4 boneless skinless chicken breast halves (about 5 ounces each)
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 1 (14-ounce) can coconut milk
- 1 (4-ounce) can diced green chilies
- 1 teaspoon curry powder
- 1 teaspoon Garam masala
- 1 teaspoon ground cumin
- 1 cup couscous, cooked according to package directions
- 2 tablespoons freshly chopped cilantro leaves
Roast Turkey

2 to 3 days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees
- For the aromatics:
- 1 (14 to 16 pound) frozen young turkey
- 10 clover garlic
- 1 gal vegetable stock
- 1 c. kosher salt
- 1/4 c. light brown sugar
- 1/4 c. black peppercorns
- 1 1/2 tsp allspice berries
- 1 1/2 tsp thyme
- 1 bay leaf
- 1 gal ice water
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 c. water
- 4 sprigs rosemary
- 6 leaves sage
- Canola oil
Corn on the Cob

Place corn that is still in the husk and untrimmed in a microwave-safe dish; microwave on High for 3 minutes
- 1 ear of fresh corn per person
Summer Squash Enchiladas

Cook onions, peppers and garlic in oil 2 minutes, add squash
- 3/4 c. chopped onion
- 3/4 c. chopped mixed peppers
- (red, green, yellow)
- 2 cloves minced garlic
- 1 tbs olive oil
- 3 c. chopped yellow squash or zucchini
- 1 recipe Spicy sauce (below)
- 8 6-7” tortillas
- 1 1/2 c. chopped tomatoes
- 1/2 c. Monterey Jack cheese
- Sour cream
Grilled Pretzel Beef Burgers

Combine beer, pretzels, onion, relish, and salt in a bowl
- 2/3 cup beer or tomato juice
- 1/2 cup crushed pretzels
- 2 to 4 tablespoons chopped onion
- 2 tablespoon pickle relish
- 1/2 teaspoon salt
- 2-1/2 pounds lean ground beef
- 8 hamburger buns or 16 slices French bread, toasted
- Roasted sweet pepper strips, onion slices, pickled peppers, sliced tomato, ketchup, and/or mustard
Green Monster Spinach Smoothie

Combine all ingredients in a blender and blend until smooth
- 1 frozen sliced banana
- 1 Tablespoon peanut butter
- 1/2 cup 0% Vanilla Chobani Greek yogurt
- 1 cup Unsweetened Vanilla Almond Breeze (or other kind of milk)
- 4 cups baby spinach (or more, or less)
