New Potatoes and Peas with Ham

Scrub and cook potatoes in salted water until partially tender
- 12 sm new potatoes
- 4 gr onions
- 2 c. frozen peas
- 2 tbs butter
- 2 tbs flour
- 1 1/2 c. vegetable liquid or milk
- Salt and pepper
- 2 c. cubed ham*
- 1/2 c. shredded cheese
Cranberry Coleslaw

Whisk together first 5 ingredients
- 1/4 c. apple cider vinegar
- 2 tbs Dijon mustard
- 2 tbs honey
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 c. canola oil
- 1-16 oz pkg coleslaw mix
- 4 gr. onions, sliced
- 2 celery ribs, sliced
- 2 c. chopped almonds
- 3/4 c. cranberries
Roasted Spaghetti Squash

Pre-heat the oven to 400 degrees
- 1 spaghetti squash
- Olive oil
- Salt and pepper
Brie and Cranberry Tartlets

Preheat oven to 350°. Line a baking sheet with heavy-duty aluminum foil
- 3 1.9-oz pkg miniature phyllo pastry shells (45 shells)*
- 1 c. whole-berry cranberry sauce
- 1 tbs orange zest
- 1 8-oz wheel of Brie, rind removed
Hamburger Soup

In a large pan brown ground beef and onion
- 1/2 lb ground beef
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 potatoes, cubed
- 3 carrots, diced
- 2 c. chopped cabbage
- 2 16 oz can tomatoes
- 1 c. whole kernel corn
- 1/4 c. rice, or pasta
- 4 to 6 c. water
- 2 bay leaves
- 2 to 3 tsp salt
- 1 tbs Worcestershire sauce
- Pepper to taste
Sausage Skillet Supper

In a medium skillet, cook and crumble sausage, drain
- 1 lb bulk pork sausage
- 1 16 oz can kidney beans, drained & rinsed
- 1 c. uncooked long grain brown rice
- 2 c. water
- 2/3 c. picante sauce
Fish-Pesto Melts

In a medium bowl, combine fish, pesto, red peppers, mayonnaise, and Parmesan
- 2 cooked fillets, broken into 1-inch pieces (about 2 cups)
- 1/4 cup prepared basil pesto
- 2 tablespoons jarred roasted red peppers, diced
- 2 to 3 tablespoons mayonnaise
- 1 tablespoon grated Parmesan
- Salt and freshly ground black pepper
- 4 thick slices rye bread
- 8 slices Swiss cheese
Sweet Potatoes & Apple

Bake the sweet potatoes in 375 degree oven for about 45 minutes or until tender
- 4 lg sweet potatoes
- 3 lg cooking apples
- 1/2 c. brown sugar
- 1/3 c. granulated sugar
- 1 tsp cinnamon
- 1/2 c. butter
- 1 6oz can frozen apple juice concentrate
Sautéed Collard Greens

- 2 lb collard greens
- 2 cloves garlic
- 2 tbs bacon drippings
- Salt and pepper to taste
Mexican Lasagna

- 12 ounces cooked chicken, cut into 1-inch cubes (about 3 cups)
- 1 cup sour cream (regular or low-fat)
- 1 cup shredded Monterey Jack cheese (regular or low-fat), divided
- 1 cup shredded Cheddar (regular or low-fat), divided
- 1/2 cup mild, medium or hot salsa
- 1 (4-ounce) can chopped green chiles
- 2 tablespoons chopped fresh cilantro leaves
- 1 teaspoon ground chili powder
- 1/4 teaspoon cayenne pepper, or to taste
- 8 (6-inch) corn tortillas, cut into 6 wedges
