  • 1 head romaine, torn into bite size pieces
  • 2 med tomatoes, chopped
  • 1 cucumber, peeled and sliced

  • 1/2 c. olive oil
  • 2 tbs red wine vinegar
  • 1 tbs fresh lemon juice

  • 6 c. all-purpose flour
  • 1 1/2 tsp baking soda (check expiration date first)
  • 3 tsp baking powder
  • 1 tbs kosher salt
  • 2 tbs sugar
  • Combine all of the ingredients in a lidded container. Shake to mix.
  • Use the mix within 3 months. Makes 3 batches.

Preheat oven 350 degrees. Saute onion in butter, add tomato sauce, chilies and salt

  • 1/2 lb. Monterey Jack cheese (sliced or grated)

  • 8 oz. tortilla chips
  • 1 c. sour cream
  • 1/2 c. grated Cheddar cheese
