Warm New Potatoes and Pea Salad

Boil the potatoes until cooked
- 2 lb new potatoes, scraped and halved if large
- 1 c. frozen peas
- 2 scallions, sliced
- Olive oil
- 7 oz sour cream
- 1 tsp wholegrain mustard
- Lemon
Summer Squash and Corn

Heat the oil in a skillet over medium-high heat, and cook the onion and garlic until slightly tender
- 2 tbs olive oil
- 1/2 yellow onion, sliced
- 4 cloves garlic, minced
- 1/2 c. chicken broth
- 1 c. frozen corn
- 2 c. sliced yellow squash
- 2 c. sliced zucchini
- 1 tbs chopped parsley
- 2 tbs butter
- Salt and pepper to taste
Spanish Rice

In a medium sauce pan, heat oil over medium heat
- 2 tbs oil
- 3 cloves finely chopped garlic
- 1/2 onion, chopped
- 1 1/2 c. rice
- 2 1/2 c. chicken broth
- 1/2 c. tomato sauce
- 1/2 c. diced tomatoes
- 1/4 c. gr. chilies
- 1/2 chopped green pepper
- 1/2 chopped red pepper
- 2 tsp cumin
- 4 tbs cilantro, finely chopped
Eggplant Beef Stew

In saucepan, brown the meat
- 2 med eggplant, peeled and cubed
- 1 lb ground beef
- 2 med onion, chopped
- 4 cloves garlic, minced
- 2 lg potatoes, cubed
- 1 can tomatoes
- 2 c. water
- 1/2 tsp nutmeg
- 1 tsp cumin
- 1 tsp ground fennel
- salt & pepper -- to taste
Eggplant Casserole

Cook eggplant in small amount of water with ½ teaspoon of salt about 10 minutes
- 1 med eggplant, peeled and diced
- 1/2 tsp salt
- 1/2 c. butter, divided
- 1 sm onion, chopped
- 1 sm gr. pepper, chopped
- 1 tbs brown sugar
- 1 tsp salt
- 1 tbs flour
- 1 16oz can crushed tomatoes
- 1 c. cornbread crumbs
- Grated cheddar cheese
Romaine Salad

Combine lettuce, tomato, cucumber, and onion in salad bowl
- 1 head romaine, torn into bite size pieces
- 2 med tomatoes, chopped
- 1 cucumber, peeled and sliced
- 1/2 red onion, thinly sliced
- 1/2 c. sliced ripe olives
- 1/2 c. olive oil
- 2 tbs red wine vinegar
- 1 tbs fresh lemon juice
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/4 c. crumbled or grated Parmesan cheese
Instant Pancake Mix

- 6 c. all-purpose flour
- 1 1/2 tsp baking soda (check expiration date first)
- 3 tsp baking powder
- 1 tbs kosher salt
- 2 tbs sugar
- Combine all of the ingredients in a lidded container. Shake to mix.
- Use the mix within 3 months. Makes 3 batches.
Cranberry Bread

Directions: 1 Heat oven to 350º
- 2 cups fresh cranberries or 2 cups frozen cranberries, chopped
- 1 2/3 cups sugar
- 2/3 cup vegetable oil
- 1/2 cup milk
- 2 teaspoons grated lemons or 2 teaspoons grated orange rind
- 2 teaspoons vanilla
- 4 eggs
- 3 cups all-purpose flour
- 1/2 cup coarsely chopped walnuts or 1/2 cup coarsely chopped pecans
- 4 teaspoons baking powder
- 1 teaspoon salt
TORTILLA CHIP CASSEROLE

Preheat oven 350 degrees. Saute onion in butter, add tomato sauce, chilies and salt
- 1 med. onion, finely chopped
- 2 tbsp. butter
- 1 (15 oz.) can tomato sauce
- 1 (4 oz.) can green chilies
- 1 tsp. salt
- 1/2 lb. Monterey Jack cheese (sliced or grated)
- 2-3 c. cooked chicken or ground beef
- 8 oz. tortilla chips
- 1 c. sour cream
- 1/2 c. grated Cheddar cheese
Lemon Ginger Fruit Salad

Cut first 5 ingredients into bite-size pieces; place in a large bowl
- 2 lg apples
- 2 lg mangoes, peeled
- 2 c. sliced red grapes
- 2 cans mandarin oranges, drained
- 1 fresh pineapple, peeled and cored
- 1/4 c. fresh lemon juice
- 2 tbs honey
- 2 tsp finely grated fresh ginger
