Pecan-Crusted Chicken

Place chicken between sheets of plastic wrap and pound with a meat mallet to ¼ inch thickness
- 4 4oz boneless, skinless chicken breast
- 1/2 c. pecan pieces
- 1/4 c. bread crumbs
- 1 1/2 tsp freshly grated orange zest
- 1 egg
- 2 tbs water
- 2 tbs oil, divided
Macaroni Salad

Mix all the ingredients together in a large bowl
- 2 cups cooked elbow macaroni
- 3 hard-boiled eggs, chopped
- 1 cup diced celery
- 1/4 cup diced green bell pepper (½ pepper)
- 2 tablespoons diced green onions
- 1 tablespoon chopped pimento
- 1 cup mayonnaise
- 1 teaspoon lemon pepper
- Salt and garlic powder to taste
- 1 tablespoon prepared yellow mustard
5-Minute Southwest Salad

COVER platter with lettuce; top with layers of next 4 ingredients
- 6 cups torn romaine lettuce
- 1 can (15 oz.) black beans, rinsed
- 1 can (11 oz.) whole kernel corn, drained
- 1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
- 1/2 cup KRAFT Natural Three Cheese Crumbles
- 1/2 cup KRAFT Ranch Dressing
- 1 cup broken tortilla chips
Zucchini Sour Cream Casserole

Steam zucchini for 5 minutes
- 6 med zucchini (about 2 lbs), cut into 1/2" slices
- 1 8 oz carton sour cream
- 2 tbs butter
- 1 c. shredded cheddar cheese
- 1/2 tsp seasoned salt
- 1/2 tsp pepper
- 1/2 c. crushed saltines
Cabbage Soup

In a large pot, sauté the green onions in a small amount of olive oil
- 6 lg gr. onion, sliced
- 2 gr. peppers, cut in bite size pieces
- 1 can diced tomatoes
- 3 carrots, sliced
- 10 oz sliced mushrooms
- 4 rib of celery, sliced
- Half head of cabbage cut in bite size pieces
- 1 pkg Lipton soup mix
- 10 c. water
- 2 c. chicken broth
Multigrain Stuffed Pepper Cups

* Cut peppers in half lengthwise; remove stems and seeds
- 4 large sweet red or green peppers
- 1 pound lean ground turkey
- 3 green onions, sliced
- 2 garlic cloves, minced
- 1 jar (26 ounces) meatless spaghetti sauce, divided
- 1/2 cup frozen corn, thawed
- 1/2 cup dried currants
- 1/2 cup white wine or chicken broth
- 1/4 cup cooked medium pearl barley
- 1/4 cup cooked bulgur
- 1/4 cup cooked lentils
- 2 tablespoons brown sugar
- 1/4 to 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup shredded Parmesan cheese
Mini Chicken and Broccoli Pot Pies

- Vegetable oil cooking spray
- 2 tablespoons unsalted butter, at room temperature
- 2 tablespoons all-purpose flour
- 3/4 cup whole milk, at room temperature
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup grated Parmesan
- 1 small store-bought rotisserie chicken breast, chopped into 1/4-inch pieces (about 3/4 cup meat)
- 1 cup broccoli florets, cut into 1/4 to 1/2-inch pieces, steamed (about 2 ounces)
- All-purpose flour, for dusting
- Two 10-inch round unfold-and-bake frozen pie crusts, thawed
- 1 large egg
- Special equipment: 12-cup mini-muffin pan; 3-inch round cookie cutter; 2-inch round cookie cutter
Roasted Potato Stacks

- Butter, room temperature, for muffin cups
- 2 medium russet potatoes (about 3/4 pound each)
- Coarse salt and ground pepper
- 6 tablespoons heavy cream
