Squash Salad

Combine zucchini, squash, red pepper, and onions
- 1/2 # zucchini, grated
- 1/2 # yellow squash, grated
- 1 med carrots, grated
- 1 medium sweet red pepper, chopped
- 1/2 bunch green onions, chopped
- 1/8 cup oil
- 1/8 cup cider vinegar
- 2 tb mayonnaise
- 1/2 tsp sugar
- 1/4 tsp salt
- pinch of celery salt
- pinch of black pepper
Southwestern Beef Combo

Brown the beef in skillet
- 1 lb ground beef
- 1 1 3/4 oz pkg chili seasoning mix
- 1/4 c. breadcrumbs
- 1 tbs oil
- 1 15oz can kidney beans
- 1 c. frozen corn
- 1 15oz can diced tomatoes
- 1/4 c. chopped gr pepper
- 1/4 c. chopped onion
- 1/4 tsp oregano
- 1/2 c. barley
Venison or Beef Pot Pie

Place large sauté pan over low heat
- 1 pound venison or beef, cut into pea-sized cubes
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup each, fresh or frozen: carrots, corn, green beans, peas,
- 1/3 cup flour
- salt and pepper to taste
- marjoram and thyme to taste (1 teaspoon each)
- 2 teaspoons Worcestershire sauce (to taste)
- 1 double pie pastry
Beef Chop Suey

In a large skillet or wok, heat 1 tablespoon oil until hot
- 1 tbs plus 1 tsp olive oil, divided
- 3 eggs, lightly beaten
- 15 oz thin strips top sirloin steak
- 2 1/2 c. coleslaw mix
- 1/2 lb broccoli
- 1/2 c. chopped onion
- 4 c. cold cooked rice
- 3 tbs butter, cubed
- 3 tbs soy sauce
- 1/8 tsp pepper
Meat Pot Pie

Green Beans with Craisins and Almonds

Toast almonds in fry pan and set aside
- 1 lb green beans
- 1 tbs coconut oil
- Pinch ground nutmeg and allspice
- Salt and pepper
- 1/2 c. sliced almonds
- 1/2 c. craisins
- Juice and zest of 1/2 orange
Tenderloin Medallions

Lightly sprinkle tenderloins with pepper and seasoning, set aside
- 1 lb tenderloin medallions, venison or beef
- 1/2 tsp ground pepper
- meat seasoning of choice
- 3 med onions, thinly sliced
- 1 garlic clove, minced
- 3 tbs butter
- 4 oz sliced mushrooms
- 3 tbs flour
- 2 c. water
- salt to taste
Perfect Brown Rice

Rinse rice in a strainer under cold running water for 30 seconds, swirling the rice around with your hand
- brown rice (whichever type you prefer)
- water – use at least four cups of water for every one cup of rice
- salt – to taste
Better-than-Ever Cheesy Meat Lasagna

HEAT oven to 375°F. BROWN meat with garlic and oregano in large saucepan
- 3/4 lb. extra-lean ground beef
- 3 cloves garlic, minced
- 1-1/2 tsp. dried oregano leaves
- 1 jar (24 oz.) spaghetti sauce
- 1 large tomato, chopped
- 1 egg
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1/4 cup KRAFT Grated Parmesan Cheese
- 9 lasagna noodles, cooked
- 1 pkg. (7 oz.) KRAFT 2% Milk Shredded Mozzarella Cheese, divided
Tomato Avocado Salad

For salad: Arrange over lettuce leaves: wedges of tomato, avocado and slices of olives
- 6 lettuce leaves
- 2 tomatoes
- 1 med avocado
- Black olives
- Lemon juice
- Spike
- Sweet Russian Dressing
- 1/2 c. oil
- 1/4 c. honey
- 1/4 c. ketchup
- 2 tbs apple cider vinegar
- 1 1/2 tsp soy sauce
- 1/8 tsp dry mustard
