Healthier Deviled Eggs Recipe

Cut eggs in half and remove yolks
- 6 hard boiled eggs
- 1/2 ripe avocado
- 1/2 lemon
- 2 tsp Dijon mustard
- salt to taste
Chicken with Peanut Curry Sauce

Heat oil in a large frying pan over medium-high heat
- Sauce:
- 2 tablespoons canola oil
- 1 1/2 pounds chicken breast, cut in 1-inch pieces
- Salt and pepper
- 8 ounces cut green beans
- 8 ounces pepper strips
- 1 1/2 cups light coconut milk
- 1/2 cup low sodium chicken broth,
- 1 tablespoon red curry paste
- 1/3 cup chunky peanut butter
- 2 tablespoons brown sugar
- 2 tablespoons lime juice, plus wedges for garnishing
- Coconut Rice, recipe follows
- Cilantro sprigs for garnishing
Beef & Cauliflower Bake

Preheat oven to 350° F. Sauté beef with onions, peppers, mushrooms and garlic
- 1 lb ground beef
- 1 onion, chopped
- 1 gr bell pepper, chopped
- 1/2 c. chopped mushrooms
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/2 tsp dried basil or 1 tsp fresh, chopped
- 1 tbs non-fat sour cream
- 1 tbs mayonnaise
- 1/3 c. shredded cheddar cheese
- 1/2 head (8oz) cauliflower-broken up
Skillet Cabbage

Heat butter in oil in skillet
- 1 tbs butter
- 1 tbs olive oil
- 2/3 c. chopped onion
- 1 clove minced garlic
- 3 c. finely sliced cabbage
- 2/3 c. shredded carrots
- 1/8 tsp paprika
- salt & pepper
Pesto

- 1/4 c. walnuts
- 1/4 c. pine nut
- 3 tbs chopped garlic (9 cloves)
- 5 c. fresh basil leaves, packed
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 1/2 c. good olive oil
- 1 c. freshly grated Parmesan
Grilled Ham & Cheese Sandwich

Heat the griddle. Toss the ham into the griddle to warm it up a little
- 8 slices bread
- Butter
- Sliced Ham (12 thick slices or 24 thin slices)
- 4 slices cheese
- 4 tomato slices
Cabbage Wedges

- 1/2 ½ head of cabbage

Coconut Rice

In a medium saucepan, combine coconut milk, chicken broth, lime juice, and instant rice
- 3/4 cup light coconut milk
- 1 cup low-sodium chicken broth
- 1/2 lime, juiced
- 2 cups instant rice
- 1/4 cup shredded sweetened coconut, toasted
Broccoli Casserole

Preheat oven to 350 degrees F
- 1 (16 ounce) package frozen broccoli, thawed
- 2 tablespoons butter
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 (8 ounce) package cream cheese, cubed
- 1 cup crushed buttery round crackers
Caramel Apple Pork Chop

- 4 pork chops, 3/4” thick
- 4 tbs br. sugar
- Salt and pepper to taste
- 1/4 tsp cinnamon
- 1/4 tsp ground nutmeg
- 4 tbs butter
- 2 med apples, cored and cut 2” sliced
- 3 tbs chopped pecans
