Stuffed Peppers

Preheat oven to 350 Cut peppers in half lengthwise and remove seeds and veins
- 5 green peppers
- 1 sm onion chopped
- 2 cloves garlic minced
- 1 lb ground beef
- 1 tbs worstershire (sp?)
- 1 1/2 tsp Italian seasoning
- 3/4 c. no-fat ricotta cheese
- 3/4 c. frozen spinach
- salt and pepper to taste
- For sauce (you could also use bottled spaghetti sauce)
- 1 30 oz can (the big one) crushed tomatoes
- 1 1/2 tsp italian seasoning
- 1 packet sugar substitute
- 1/2 tsp garlic salt
- 1/4 tsp red pepper flakes
- 1 tbs balsamic vinegar
- salt and pepper to taste
Skinny Mashed Potatoes

In saucepan, cook potatoes and garlic in broth until tender
- 3 1/2 c. chicken broth
- 1-2 clove roasted garlic
- 5 lg potatoes, peeled & cubed
- Salt & pepper to taste

Cut broccoli into thin lengths
- 2 c. broccoli
- 1 c. cauliflower
- 4 tbs finely grated carrot
- 4 tbs finely grated cabbage
- 4 tbs finely grated squash
- 1/2 c. barbecued onions (recipe follows)
- 4 tortilla or pita
- 4 tbs mayonnaise
- 1 c. finely shredded lettuce
- 1 c. alfalfa sprouts
- 8 slices avocado (opt)
- Salt, or favorite salt free seasoning
Baked Sweet Potato Fries

Preheat the oven to 450 degrees F
- Sweet potatoes (one per person)
- Cooking spray
- Salt, pepper and spices (garlic powder, cumin, cayenne pepper, paprika or curry powder)
Chicken Enchiladas with Green Chili Sour Cream Sauce

Preheat oven to 350 degrees
- 10 tortillas
- 2 c. cooked, shredded chicken
- 2 c. shredded Monterey Jack cheese
- 3 tbs butter
- 3 tbs flour
- 2 c. chicken broth
- 1 c. sour cream
- 1 4oz can diced gr. chilies
- Garnish: cilantro, sour cream, chopped
- tomatoes and gr. onion
Old-Fashioned Meat Loaf- A.K.A 'Basic' Meat Loaf

- 1 pound ground beef
- 1 1/4 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 egg, lightly beaten
- 8 ounces canned diced tomatoes with juice
- 1/2 cup quick-cooking oats
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon prepared mustard
Salad Supper

Chop cucumber, tomatoes, onion, and pepper and toss together
- Cucumber
- Tomatoes
- Onions
- Gr pepper
- Hard-boiled egg
- Red leaf lettuce
- Salad dressing or oil
Cole Slaw

Combine vegetables in serving bowl
- 1 bag shredded cole slaw mix
- 1/2 ½ diced green pepper, opt
- 1/3 c. mayonnaise
- 1/2 ½ tsp prepared mustard
- 1 tsp honey
- 1 tsp apple cider vinegar
- 1/4 ¼ tsp salt
- 1/4 ¼ tsp celery seed
- 2 tbs milk
Purple Hull Peas

Sauté onion in oil 2 minutes, add celery and green pepper and sauté 2 more minutes
- 1 med onion, chopped
- 1 tbs oil
- 1 stalk chopped celery
- 1 chopped gr. pepper
- 1 1/3 c. chopped tomato
- 4 c. purple hull peas, cooked with liquid.
- Salt & pepper to taste
Easy Beef Tacos

In medium skillet, brown the ground beef; drain
- 1 lb ground beef
- 1 pkg taco seasoning
- 2/3 c. water
- 1 box taco shells (12 shells)
- Favorite salsa
- Shredded lettuce
- Shredded cheese
- 2 chopped tomato
- Sour cream
