Chicken Walnut Stir-Fry

Cut chicken into 1 inch pieces
- 2-3 chicken breasts (about 1 lb)
- 6 tbs soy sauce
- 3 tbs cornstarch
- 1/4 c. chicken broth
- 2 tsp grated fresh ginger
- 2 tsp sugar
- Salt and pepper
- 2 tbs oil
- 2 gr peppers cut into 3/4 inch pieces
- 4 gr onions, sliced into 1 inch lengths
- 1 bunch chopped broccoli
- 1 c. walnut halves
Crock Pot Santa Fe Chicken

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepp...
- 1 1/2 lbs chicken breast
- 14 oz can diced tomatoes
- 1 can mild chilies
- 15 oz can black beans
- 8 oz frozen corn
- 1/4 cup chopped fresh cilantro
- 14 oz can fat free chicken broth
- 3 scallions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- salt and pepper to taste
Five Bean Chili

In a skillet over medium-high heat, brown ground beef with the onions
- 1 1/2 pounds lean ground beef
- 2 cups chopped onion
- 1 (15-ounce) can light red kidney beans, drained
- 1 (15-ounce) can dark red kidney beans, drained
- 1 (15-ounce) can cannellini beans, drained
- 1 (15-ounce) can butter beans, drained
- 1 (15-ounce) can pinto beans, drained
- 2 (14 1/2-ounce) cans diced tomatoes with jalapenos
- 2 (1 1/4 ounce) packets chili seasoning mix
- 1 (8-ounce) can tomato sauce
- 1 cup water
- Salt and pepper
- Suggested servings: cornbread, sour cream, cheese, chips, and fresh cilantro
Garlic Bread

For Toast & Crispy Garlic Bread Preheat oven to 350°F
- 16 oz loaf of bread (French or Italian)
- 1/2 c. softened butter.
- 2-3 lg garlic cloves, minced thoroughly
- 2 tbs of freshly and finely cut parsley
- 1/4 c. grated Parmesan cheese, opt
Strawberrt Delight

Blend 2 cups strawberries and sugar in food processor
- 2 c. fresh strawberries, washed and hulled
- 1/4 c. sugar
- 1 c. cool whip
- 4 fresh strawberries, whole
Barley Soup

Heat the water in pot over medium heat
- 6 c. water
- 3 tsp chicken bouillon
- 1/2 c. pearled barley
- 2 chopped carrots
- 2 chopped celery stalks
- 2 peeled and chopped potatoes
- 1 chopped onion
- 2 minced garlic cloves
- Salt & pepper to taste
- 1/2 tsp marjoram
- 1/3 c. fresh chopped parsley
Grilled Chicken with Peppers and Onions

Heat a stove-top grill pan or griddle to medium high heat and coat with cooking spray
- Cooking spray
- 8 boneless skinless chicken breast halves, about 5 ounces each
- Salt and freshly ground black pepper
- Salt-free roasted garlic seasoning (recommended: McCormick)
- 1 tablespoon olive oil
- 1 cup thinly sliced onion
- 2 jalapeno or serrano peppers, seeded and minced
- 2 tablespoons sugar
- 1 cup reduced-sodium chicken broth, divided
- 2 bay leaves
- 2 teaspoons cornstarch
- 2 tablespoons chopped fresh parsley leaves
Layered Green Salad

Place bacon in a large, deep skillet
- 1/2 lb bacon
- 1 sm bunch of red leaf lettuce, chopped
- 1 sm head of iceberg lettuce, chopped
- 6 gr onions, thinly sliced
- 1 10oz pkg frozen gr peas
- Shredded cheddar cheese
- 1 c. chopped cauliflower
- 1 1/4 c. mayonnaise
- 1/4 c. milk
- 2 tbs sugar
- 2/3 c. grated parmesan cheese
Grilled Fish Sandwiches

- 4-4 oz favorite fresh fish fillets
- 1 tbs lemon juice
- 1 tsp lemon-pepper seasoning or favorite seasoning
- 1/2 cup mayonnaise
- 4 teaspoons Dijon mustard
- 1 -3 teaspoon honey
- 4 slices favorite sandwich rolls, split and toasted

Blueberry Crumble With Cornmeal-Almond Topping
