Scalloped Potatoes

In a small sauce pan, melt butter and blend in flour
- 1/2 chopped onion, optional
- 4 c. thinly sliced potatoes
- 3 tbs butter
- 3 tbs flour
- 1 1/2 c. milk
- 1 tsp salt
- 1 dash pepper
- 1 c. grated sharp cheddar cheese
- 1/2 c. grated cheese, to sprinkle on top
- paprika
Quick Ham and Pineapple over Couscous

Cook garlic and onion in a large skillet in oil
- 2 garlic cloves, crushed
- 1/4 of a large red onion, chopped
- 2-3 Tbs. vegetable oil
- 1 red bell pepper, chopped
- 1 jalepeno, seeds removed, diced
- 1 lb. ham cubes
- 20oz can pineapple tidbits, drained and juice reserved
- salt and pepper to taste
- couscous cooked in chicken broth
Bird to the Last Drop

- 2 quarts vegetable stock
- 1 turkey carcass
- 1 (10-ounce) box frozen mixed vegetables
- 1/2 cup long grain rice
- 2 cups cubed cooked turkey
- 1 teaspoon crab boil seasoning (recommended: Old Bay)
- 2 teaspoons dried thyme
- Kosher salt
- Freshly ground black pepper
Crock Pot BBQ Chicken

Place chicken in a slow cooker
- 6 frozen skinless boneless chicken breast
- 12 oz favorite barbeque sauce
- 1/2 c. Italian dressing
- 1/4 c. br. sugar
- 2 tbs Worcestershire sauce
Fresh Salad

Place ear of corn in microwave for 3 minutes
- 1 12oz bag lettuce mix
- 1 ear of corn
- 1/2 c. gr. peas
- 1/2 red onion, thinly sliced
- 1 fresh basil leaves, chopped
- Feta cheese
- Sliced strawberries
- Poppy seed dressing
Sausage Cups

Preheat oven to 350° F. Crumble sausage into medium skillet
- 1 pound Bob Evans Original Sausage Roll
- 1 package Won Ton Wrappers
- 1 cup Monterey Jack Cheese, shredded
- 1 cup Cheddar Cheese, shredded
- 1/2 cup Ranch Dressing
Dressed up Deli Potato Salad

In a large mixing bowl, combine all ingredients
- 2 pounds deli potato salad
- 1 teaspoon Mexican seasoning
- 1 scallion, chopped
- 1 tablespoon finely chopped fresh cilantro leaves
Cranberry-Pineapple Gelatin Salad

Spray a 4-cup gelatin mold or a 9-inch square pan with vegetable oil cooking spray
- Topping:
- 2 (3-ounce) packages raspberry gelatin
- 1/2 envelope unflavored gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 (8-ounce) can crushed pineapple packet in its own juice
- 1 (15-ounce) can whole cranberry sauce
- 1/4 cup finely chopped walnuts
- 1 (8-ounce) package cream cheese
- 1/4 cup confectioners' sugar
- 2 tablespoons whipped cream
- 1/4 cup walnuts
Basil and Tomato Green Beans

Add the green beans to a large pot of boiling salted water
- 1 lb green beans, ends trimmed
- 1 tbs butter
- 1 med shallot, chopped
- 1/2 ½ tsp red pepper flakes
- Salt and freshly ground black pepper
- 1/8 c. white wine
- 1 med tomato, diced
- 1 tbs fresh basil leaves
No Bake Pumpkin, Raisin, Oatmeal Cookie Recipe

Combine all the dry ingredients
- 1 cup quick oats
- 1/4 cup raisins
- 1/4 teaspoon salt
- 1/2 teaspoon pumpkin pie spice
- 1/3 cup canned pumpkin
- 1 tablespoon oil (such as canola)
- 1/2 teaspoon vanilla extract
- 2 tablespoons honey
