Low-Cal Fettuccine Alfredo

Make the sauce: Melt the butter in a skillet over medium heat
- 1 tbs butter
- 1 clove garlic, minced
- 1 tsp grated lemon zest
- 2 tsp all-purpose flour
- 1 c. low-fat (2%) milk
- Kosher salt
- 2 tbs Neufchtel or low-fat cream cheese
- 3/4 c. grated parmesan cheese, plus more for topping
- 3 tbs chopped fresh parsley
- 12 oz fettuccine
- Freshly ground pepper
Lentils and Brown Rice Casserole

Preheat oven to 300. Add broth, lentils, brown rice, chopped onion, and spices to 9×13-inch glass baking dish
- 3 cups broth
- 3/4 c. lentils
- 1/2 c. brown rice
- 1/2 onion, chopped
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups shredded sharp cheddar cheese

- 3 cups chicken broth
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/8 tsp garlic powder
- 1 c. regular grits
- 2 c. shedded cheddar cheese
- 1/4 cup milk
- 2 large eggs, beaten
- 1/4 cup butter

- 2 cups broccoli florets
- 4 cups cooked spiral pasta
- 2 medium carrots, julienned
- 1/2 cup frozen peas, thawed

- 1/2 cup cubed Cheddar cheese
- 1/3 cup sliced green onions
- 3/4 cup mayonnaise
- 2 tablespoons cider vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon dill weed
- 1/4 teaspoon pepper

Easy Crockpot Mongolian Beef
