Cassoulet (Bean Stew with chicken)

Preheat the oven to 350 degrees F
- 4 bone-in, skin-on chicken thighs, cut in 1/2 through the bone
- Salt and freshly ground black pepper
- 1/2 pound slab bacon, sliced into large lardons
- 1 large onion, chopped
- 3 celery stalks, chopped
- 2 carrots, chopped
- 4 cloves garlic, minced
- 1/2 cup white wine
- 2 cups cooked Northern white beans
- 1 bay leaf
- 2 teaspoons dried thyme
- 1/2 cup chicken stock
- 1 tomato, sliced very thinly
- Garlic Bread Crumbs, recipe follows
- 1 baguette, sliced, for serving
Biscuits

Preheat oven to 400 degrees F (205 degrees C) and place rack in center of oven
- Topping:
- 2 1/2 c. all-purpose flour
- 2 1/2 baking powder
- 1/2 tsp salt
- 1 tbs granulated white sugar (optional)
- 1/2 c. cold unsalted butter, cut into small pieces
- 3/4 c. milk
- 1 lg egg, lightly beaten
- 1 lg egg, lightly beaten with 1 tablespoon milk
Chicken Salad*

In a mixing bowl combine all ingredients and chill at least 1 hour
- 1 1/2 c. chopped cooked chicken or turkey
- 1 chopped celery stalk
- 4 sliced green onions
- 1 tbs lemon juice
- 2 chopped hard cooked eggs
- 1/3 c. mayonnaise
- 2 tbs dill pickle relish
- 2 tsp prepared mustard
Caprese Tartlets

Preheat the oven to 375 degrees F
- 8 slices white bread
- 1/4 cup extra-virgin olive oil
- 3 tablespoons cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- Kosher salt and freshly ground black pepper
- 2 Roma tomatoes, thinly sliced
- 4 ounces fresh mozzarella (approximately 2-inch ball), thinly sliced
- Balsamic vinegar, for drizzling, optional
- 8 fresh basil leaves, chiffonade
Peanut Butter Cup Cookies

Cut cookie dough into 9 slices and then each slice into fourths, or divide dough into 36 balls
- 1 roll refrigerator peanut butter cookies
- 36 miniature Reese's peanut butter cups
Pulled Pork

Rinse and thoroughly dry the meat
- 1 pork butt, about 5 pounds
- 3 tbs of vegetable oil
- 1/3 c. butt rub of choice
- 2 c. wood for smoke
- 10 hamburger buns
- 1 c. of your favorite barbecue sauce
Carrot-Zucchini Salad

Combine salad. Blend dressing ingredients thoroughly with wire whisk
- Salad:
- 2 cups grated carrot
- 1 cup grated zucchini
- 1 cup grated yellow squash
- 1 cup shredded cabbage
- 1 rib celery, chopped
- 2 green onions
- 1 small can crushed pineapple
- green pepper, opt
- Dressing:
- 1/2 cup plain yogurt
- 1/4 cup mayonnaise
- 1/2 T lemon juice
- 2 tsp parsley flakes
- 1/4 tsp onion powder
- 1/8 tsp garlic powder
- pinch of salt
- pinch of sugar
Pineapple Mango Salsa

Combine diced pineapple, mango, red onion, jalapeno, and cilantro
- 1 pineapple, peeled & diced
- 1 mango, diced
- 1/2 med red onion, finely diced
- 1 jalapeno, seeded & diced
- fresh cilantro, chopped
- 1 whole lime, juiced
- dash salt
- dash sugar (optional)
Delicious Dinner Rolls

Scald 1 1/2 cups of milk, 3/4 cup sugar and 1/2 cup of butter, in a microwave safe bowl, for about 2 minutes
- 1 1/2 c. of milk
- 3/4 c. + 1 tbs sugar
- 1 egg
- 1 tbs salt
- 2 tbs yeast
- 2 c. of warm water
- 9-10 about 9-10 cups of all purpose flour
- at least 1 cup of butter
Red Potato Salad

Cook potatoes. While potatoes cook combine the mayonnaise, vinegar, salt, sugar and pepper
- 4 c. cubed red potatoes
- 1 c. mayonnaise
- 2 tbs vinegar
- 1 1/2 tsp salt
- 1 tsp sugar
- 1/4 tsp pepper
- 1 c. sliced celery
- 1/2 chopped red onion
- 2 chopped hard-boiled eggs
