Roasted Root Vegetables

Turn oven to 375. Mix all ingredients in a bowl
- 2 med carrots, sliced about 1/2-inch rounds
- 1 lb brussel sprouts, washed, trimmed and cleaned
- 1 onion, quartered
- 2 med beets, cleaned and peeled, cut 1-inch cubed
- 1 T. olive oil
- 1/4 t. salt
- Fresh rosemary, enough to flavor
California Crockpot Chicken

Arrange chicken in slow cooker
- 3 lb. chicken, quartered
- 1 cup orange juice
- 1/3 cup chili sauce
- 2 Tbsp soy sauce
- 1 Tbsp molasses
- 1 tsp dry mustard
- 1 tsp garlic salt
- 2 Tbsp chopped red peppers
- 1 (13.5 oz) can mandarin oranges
Old Fashion Lentil Soup

Sauté onion, carrots and celery two minutes
- 1 tbs olive oil
- 1 lg onion, chopped
- 2 lg carrots, chopped
- 2 rib celery, chopped
- 1 clove garlic, minced
- 3 1/4 c. water
- 3 1/4 c. chicken broth
- 1 1/2 c. lentils
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1-2 tbs fresh parsley, chopped
- 1 tsp sweet paprika
- 1/2 tsp spike (opt)
- 1/2 tsp salt
- 1 c. corn
Brown'n'Serve Rolls

Dissolve sugar in warm water, sprinkle in the yeast, stand 10 mins
- 2 tsp sugar
- 1/2 cup warm water
- 2 pkg dry yeast
- 4 1/4 to 4 3/4 cups flour
- 3/4 cup milk
- 1/2 cup sugar
- 1 tsp salt
- 1/2 cup shortening
- 2 eggs
Salmon Baked in Foil

- 4 (5 oz each) salmon fillets
- 2 tsp olive oil plus 2 tbs
- Salt and freshly ground black pepper
- 3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
- 2 chopped shallots
- 2 tbs fresh lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
Crockpot Taco Soup

Add all ingredients to crockpot and cook on low 5 hours or high 3 hours
- 4 chicken breast about 1 lb
- 1 15oz can crushed tomatoes
- 2 sliced carrots
- 1 diced onion
- 1 diced celery stalk
- 1 diced gr pepper
- 1 c. frozen corn
- 1 1/2 tsp chili powder
- 1 1/2 tsp cumin
- Salt & pepper to taste
- 4 c. chicken broth
- Tortilla chips
- Shredded cheese
- Sliced avocado (opt)
- Sour cream (opt)
Chicken-Green Chili Straws

Preheat oven to 400 degrees F
- Cooking spray
- 1 1/2 cups cooked chicken thigh meat, chopped
- 1/2 cup sour cream
- 1/3 cup shredded Mexican cheese blend (recommended: Kraft or Sargento)
- 1 (4-ounce) can diced green chiles
- 2 tablespoons chopped fresh cilantro leaves
- 1 teaspoon ground cumin
- 1 package egg roll wrappers
- honey mustard for dipping
Vegetable Lasagna

Steam spinach, drain and chop
- 1 head fresh spinach
- 1 tbs olive oil
- 1/2 c. chopped onion
- 1 c. diced carrots
- 1 clove garlic, minced
- 1 c. sliced fresh mushrooms
- 2 c. spaghetti sauce
- 2 1/4oz can slliced black olives, drained
- 1 1/2 tsp oregano
- 1 tsp basil leaves
- 3 med zucchini thinly sliced
- 1/2 c. grated cheddar cheese
- 1/2 c. grated mozzarella cheese
- 1 c/ cottage cheese
- 2 eggs
- 1/4 c. Parmesan cheese
Crock Pot Beef Stroganoff

Cut sirloin steak into 1" cubes
- 1 to 1 1/2 lbs. sirloin steak, cut into 1 inch cubes
- 1 tablespoon cooking oil
- 8 ounces sliced mushrooms
- 1/2 cup chopped onion
- 2 gloves garlic, minced
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 tablespoons cooking sherry
- 8 ounces sour cream
- 4 tablespoons cornstarch
- 1/4 cup beef broth chilled
Lemon Garlic Tilapia

- 4 tilapia fillets
- 3 tablespoons fresh lemon juice
- 1 tablespoon butter, melted
- 1 clove garlic, finely chopped
