Chili Con Carne

In 6 quart pot, brown ground beef, onion, and green pepper until meat is lightly browned
- 1/2 lb ground beef
- 1 onion, chopped
- 1 gr pepper, chopped
- 1 16 oz can tomatoes
- 4 c. Mexican chili beans (see Beans/Grain)
- 1 8 oz can tomato sauce
- 1/2 tsp salt
- 1 tbs chili powder
- 1 bay leaf
Orange Pudding Cake

Preheat the oven to 325 degrees F
- 2 eggs
- 1/4 cup sugar
- 1 orange, zested and juiced
- 1/4 cup all-purpose flour
- 1/4 teaspoon kosher salt

- 1/4 cup dried black beans
- 1/4 cup dried kidney beans
- 1/4 cup dried pinto beans

- 1/4 cup dried pigeon peas
- 1/4 cup dried yellow peas
- 1/4 cup dried green peas

Fish in Foil

Cut the Aluminum Foil
- •fillets of white fish, like tilapia or cod
- •1 onion, chopped
- •1 red or orange bell pepper, sliced
- •1 lemon
- •3 tablespoons fresh cilantro
- •salt
- •black pepper
- •chili powder
- •1 1/2 minced garlic
- •3 tablespoons olive oil
Vegetable Fried Rice

Heat one tablespoon of oil in skillet and cook eggs until set but still moist
- 2 tbs oil
- 2 slightly beaten eggs
- 1 chopped gr pepper
- 1 sliced celery rib
- 1 diced carrot
- 2 c. broccoli florets
- 4 gr onions in 1” slices
- 1 minced garlic clove
- 1 tsp shredded fresh ginger
- 4 oz sliced mushrooms
- 4 oz water chestnuts (opt)
- 4 oz bamboo shoots (opt)
- 3 c. cooked rice
- 2/3 c. gr peas
- 3 tbs soy sauce
Red Cabbage and Corn Salad

Combine all ingredients in a large bowl and toss to combine
- 2 cups frozen or canned corn, thawed and/or drained
- 1 cup sliced red cabbage
- 2 tablespoons chopped fresh parsley leaves

- 1/2 teaspoon salt

Banana Citrus Sorbet

Place banana and lemon juice in blender and process until smooth
- 1/2 cup lemon juice
- 3 bananas
- 1 1/2 cups sugar
- 2 cups cold water
- 1 1/2 cups orange juice
Sweet Potato & Onion Upside Down Gratin

Preheat the oven to 250°F
- 7 c cherry or grape tomatoes
- 2 T olive oil, plus extra for drizzling
- 1 lb small sweet potatoes, about 2-inches diameter at widest
- 1 large onion, thinly sliced
- 2 T maple syrup
- 1 T thyme leaves
- 5 oz aged (hard) goat's cheese, sliced
- 2 T unsalted butter
- 1 c panko breadcrumbs
Sweet Potato & Black Bean Wraps

Peel the sweet potato, and stick it with a fork a few times
- 1 medium sweet potato
- 1 c. black beans
- 1 diced onion
- 1 diced bell pepper (red or green)
- salt
- garlic powder(opt)

Salmon & White Bean Salad

- 6 tbs vinaigrette dressing, divided
- 4 skin-on salmon fillets (1 lb.)

- 1 plum tomato, seeded, chopped
- 2 tbs chopped gr onions
- 2 tbs chopped fresh basil
- 6 c. torn leaf lettuce
