Grilled Garden Salad

HEAT grill to medium-high heat
- 2 ear corn on the cob, husks and silk removed
- 2 small yellow squash, each cut lengthwise into 3 slices
- 2 small zucchini, each cut lengthwise into 3 slices
- 2 tomatoes, chopped
- 1/3 cup KRAFT Zesty Italian Dressing
- 2 Tbsp. lemon juice
- 1 clove garlic, minced
- 3 Tbsp. KRAFT Grated Parmesan Cheese
- 2 Tbsp. chopped fresh basil
Chinese Pork & Mushroom Wraps

In a small bowl, mix the 2 Tbs
- 6 c. thinly sliced green cabbage
- 3/4 tsp salt
- 2 tbs hoisin sauce plus 1/2 cup for serving
- 1 tbs soy sauce
- 2 tsp sesame oil
- 1 tsp rice vinegar
- 3 tbs canola
- 2 c. shredded leftover Pork Loin, about 1/2 lb
- 1 bunch scallions, whites and light-green parts thinly sliced and green parts cut into 2-inch pieces (keep separate)
- 1/2 lb mushrooms, stemmed and thinly sliced (about 4 cups)
- 2 lg eggs, beaten
- 2 tsp. minced fresh ginger
- 2 tsp. minced garlic
- 6 to 8 8inch flour tortillas, warmed
Green Leaf Salad

Toss ingredients together and serve with your favorite dressing
- 2 c. iceberg lettuce
- 2 c. leaf lettuce
- 2 c. spinach
- 1 sliced cucumber
- 4 oz sliced mushrooms
- 1/2 c. fresh parsley
- 1 bottle of your favorite dressing
Chicken with Creamy Mushrooms and Snap Peas

- 4 chicken cutlets (about 1 1/4 pounds), patted dry
- Kosher salt and freshly ground pepper
- 2 tablespoons vegetable oil
- All-purpose flour, for dredging
- 1 tablespoon unsalted butter
- 2 scallions, thinly sliced
- 8 ounces mushrooms (button, cremini, shiitake or a combination), quartered
- 1 1/4 cups low-sodium chicken broth
- 3/4 cup heavy cream
- 2 cups sugar snap peas, stemmed and halved lengthwise
Grilled Eggplant Panini with Rosemary-Garlic Aioli

Slice eggplant into 1/4 or smaller slices
- 1 eggplant
- Dashes of salt
- 1 loaf pugliese bread, sliced
- 1 lg ripe tomato
- 1 zucchini, thinly sliced
- 1/4 c. mayo
- 2 Tbsp lemon juice
- 1 tsp olive oil
- 2 garlic cloves, crushed
- Palm full of fresh rosemary
- Salt/Pepper
- 4 slices of swiss cheese
- Handful basil leaves
- 2-3 tsp olive oil, for sauteing
- 2-3 tsp olive oil, for brushing bread before grilling

Jicama Citrus Slaw

In a large bowl, combine mayonnaise, vinegar and 2 tablespoons liquid from mandarin orange can
- 1/3 cup mayonnaise
- 2 tablespoons cider vinegar
- 1 (11-ounce) can mandarin oranges, drained and liquid reserved
- 2 cups shredded jicama
- 2 cups shredded red cabbage
- Salt and freshly ground black pepper
Salmon Salad Stuffed Tomatoes

Mix all ingredients together except tomatoes, paprika and lettuce
- 16 oz leftover salmon*
- 1/4 c. minced onion
- 1 minced celery stalk
- 1 hardboiled egg, chopped
- 1/4 c. mayo
- 1/3 c. dill pickle relish
- Chopped fresh herbs, 3 or so tbs dill, chives, parsley, tarragon
- 4 – 6 tomatoes
- Paprika
- Lettuce
