Quick Shrimp

Sauté onion and pepper in butter until tender
- 2 gr. onions chopped
- 1/2 c. finely chopped green pepper
- 2 tbs butter
- 2 c. chopped tomatoes
- 6 oz sliced mushrooms
- 1/4 c. chicken broth
- 2 tbs fresh chopped parsley
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp basil
- 1 lb sm shrimp, peeled and deveined
- Cooked rice
Mystery Bars

Pre-heat oven to 325 degrees
- 1 cup brown sugar
- 1 cup Butter (margarine won't work)
- 1 bag of Chocolate chips
- 1/2 cup chopped nuts (optional)
- 40 saltine crackers
Pastitsio

Pastitsio is a Greek classic made with pasta, meat sauce and Bechamel Sauce (white sauce)
- 1 lb lean ground beef, venison or turkey
- 1 lg onion, chopped
- 4 tbs tomato paste
- 1 c. beef broth
- 1 tsp cinnamon
- 2 1/2 c. macaroni
- 2 1/2 c. milk
- 2 tbs butter
- 3 tbs flour
- 1/2 tsp nutmeg
- 1 tomatoes, sliced
- 4 tbs bread crumbs
- Salt & pepper
Chicken & Black Bean Enchiladas

Cut chicken in strips. Cook chicken and garlic in small amount of oil
- 3/4 # chicken breast
- 2 cloves minced garlic
- 1 1/2 c. picante sauce
- 15 oz can black beans, undrained
- 15 oz can corn, drained
- 1 red bell pepper, chopped
- 2 tbs chopped fresh cilantro leaves
- 2 tsp cumin
- salt to taste
- 1/2 c. sliced green onions
- 12 -14 flour tortillas
- 1 1/2 c. (6oz) shredded Mexican style cheese
- Lettuce, shredded
- Tomatoes, chopped
- Sour cream
Braised Cabbage

Bring a big pot of water to a boil over high heat adding 2 tablespoons of salt to make the water taste like the sea
- 1 tbs cider vinegar
- 1 head cabbage, quartered, cored,
- leaves torn into large pieces
- 2 tbs butter
- 2 tbs olive oil
- 2 tbs chopped fresh flat leaf parsley
- 1/2 bunch chives, chopped
- Salt & pepper
Turkey and Black Bean Empanadas

Preheat oven to 425 degrees F
- Leftover roasted turkey or chicken (about 2 to 3 cups shredded)
- 1 (15-ounce) can black beans, drained
- 1/2 cup shredded pepper Jack or Monterey Jack cheese
- 1/2 cup shredded Cheddar
- 1/2 cup prepared salsa
- 2 tablespoons freshly chopped cilantro leaves
- 1 teaspoon ground cumin
- 2 (9-inch) refrigerated pie crusts
- 1 egg, beaten with water, if desired, for egg wash
Vietnamese Style Fried Rice

Heat tabof lespoon oil in wok on medium heat
- Day-old (cold) rice
- 3 Eggs
- Salt & Pepper
- Oil
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1/4 inch ginger, minced
- 1/4 lb. leftover turkey, cut into bite sized pieces
- 1 small carrot, diced
- 2 Tbsp. Oyster Oil
- 2 Tbsp. soy sauce
- 1 cup cabbage, chopped
Magic Cookie Bars with Variations

- 1/2cup1/2 cup butter OR margarine
- 1 1/2cups1 1/2 cups graham cracker crumbs
- 1can1 (14-ounce) can sweetened condensed milk
- 1cup1 cup (6-ounces) semisweet chocolate chips
- 1 1/3cups1 1/3 cups flaked coconut
- 1cup1 cup chopped nuts

- 1 lg onion sliced
- 1 1/2 cup water
- 2 tsp Spike
- 1/4 tsp tarragon

- 8 ounces mushrooms, quartered
- 1/4 cup extra-virgin olive oil
- mayonnaise
- 6 slices provolone cheese
- 6 sandwich rolls
