Coarsely chop almonds in food processor
- 1 cup almonds, roasted (no salt added)
- 1 cup pitted dates
- 2 lemons
- 1/2 cup sweetened shredded coconut
Roasted Butternut Squash

Preheat oven to 400 degrees F
- 1 med butternut squash, halved lengthwise and seeded
- 2 teaspoons butter
- 2 teaspoons brown sugar

Roasted Turkey

2 to 3 days before roasting: Begin thawing the turkey in the refrigerator
- For the aromatics:
- 1 (14 to 16 pound) frozen young turkey
- 10 cloves garlic
- 1 gal vegetable stock or water
- 1 c. kosher salt
- 1/4 c. light brown sugar
- 1/4 c. black peppercorns
- 1 1/2 tsp allspice berries
- 1 1/2 tsp thyme
- 1 bay leaf
- 1 gal ice water
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 c. water
- 4 sprigs rosemary
- 6 leaves sage

Grit Casserole

Crumble sausage into a large skillet
- 1 lb pork sausage (bulk)
- 4 c. water
- 1 tsp salt
- 1 cup quick-cooking grits (quick cooking)
- 4 eggs (lightly beaten)
- 1 1/2 c. cheddar cheese (shredded, divided)
- 1/2 c. milk
- 1/4 cup softened butter

- 2 sticks butter
- 1/2 tsp. salt
- 1/2 cup shortening
- 3 cups sugar
- 5 eggs
- 3 cups flour
- 1/2 tsp. baking powder

Golden Potato Soup

In heavy soup pot, melt butter and heat oil
- 2 tbs butter
- 1 tbs olive oil
- 1 clove garlic, minced
- 1 lg onion, chopped
- 2 c. celery, chopped
- 5 med potatoes, peeled and cut in chunks
- 6 yellow squash, sliced
- 1 tsp thyme
- 1/2 tsp basil
- 1/4 tsp sage
- salt & pepper to taste
- 6-7 cups chicken or vegetable broth
- 1/2 - 1 c. dry milk powder (opt)
Slow Cooked Sweet and Sour Pork Roast

Arrange potatoes and onion in bottom of slow cooker
- 3 cups cubed peeled potatoes (Idaho or Yukon gold)
- 1 cup chopped onion
- 3 pound pork roast, trimmed
- 4 cloves garlic, minced
- 1 cup water
- 1/2 cup ketchup
- 3 tablespoons red wine vinegar
- 2 tablespoons light brown sugar
- 2 tablespoons reduced-sodium soy sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon ground black pepper
- Salt

Slice the baguette into 1/4-inch slices
- 1 baguette
- 1/4 cup olive oil

White-Bean Chili

- 2 tbs extra-virgin olive oil
- 1 tbs minced garlic
- 3/4 c. diced onion
- 1 lb skinless, boneless chicken breasts, finely chopped
- 1 tbs ground cumin
- 1 tbs dried oregano
- 1/2 tsp ground white pepper
- Salt and pepper to tasste
- 1 lb collard greens, stemmed and roughly chopped (about 5 c.)
- 1 1/2 c. chopped green chiles (fresh or canned)
- 4 c. chicken broth
- 2 15oz cans navy beans, drained and rinsed
- 1/2 bunch fresh cilantro, chopped
- Light sour cream, chopped tomatoes and/or lime wedges, for garnish (optional)
Chili and Sweet Potato Shepherds Pie

Add the potatoes to a large pot, cover with water and bring to a boil over medium heat
- 2 1/2 pounds sweet potatoes, 4 to 5 potatoes, peeled and cubed
- Salt
- 2 teaspoons orange zest
- 4 tablespoons butter, cut into pieces
- 1 cup sour cream
- Freshly ground black pepper
- Freshly grated nutmeg, to taste
- 2 tablespoons extra-virgin olive oil
- 2 pounds ground turkey
- 1 large onion, chopped
- 2 small chile peppers, red fresno, jalapeno or serrano
- 1 red bell pepper, chopped
- 2 to 3 large cloves garlic, chopped
- 3 tablespoons chili powder (recommended: Gerhardt's)
- 1 tablespoon smoked sweet paprika
- 1 tablespoon ground cumin, a palmful
- 1 tablespoon ground coriander, a palmful
- 1/4 cup tomato paste
- 2 to 3 cups turkey or chicken stock
- 2 cups shredded sharp yellow Cheddar
