Copycat Taco Bell Mexican Pizza

In a large skillet, brown the beef over medium heat
- 1/2 pound ground beef
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon dried minced onion
- 1/4 teaspoon smoked paprika
- 1 1/2 teaspoon chili powder
- 2 tablespoons water
- 8 (6-inch) flour tortillas
- 1 cup Crisco vegetable shortening
- 1 (16 oz) can refried beans
- 2/3 cup mild salsa
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup diced tomato
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives
Parmesan Greens

Toss ingredients together
- 2 c. iceberg lettuce
- 2 c. leafy lettuce
- 2 c. romaine
- 1 c. croutons
- 3 tbs Parmesan cheese

- 1 sm onion, chopped
- 3 tomatoes, chopped
- 1/2 bunch parsley, chopped
- 1 T olive oil
- 1/2 tsp salt
- Dash pepper
- 1 cup stock
Jim ‘N Nick’s Cheese Biscuits

Center a rack in the oven and preheat the oven to 400 degrees F
- 1 1/2 cups flour
- 3/4 cup sugar
- 1 1/2 teaspoon baking powder
- 3/4 cup milk
- 1 egg, beaten well
- 4 tablespoon butter, melted
- 1/4 teaspoon vanilla
- 1 cup shredded cheddar cheese
Terragon Chicken Salad

In a small mixing bowl, whisk together mayonnaise, yogurt, poppy seeds, and tarragon to make dressing; set aside
- 1/2 cup mayonnaise
- 1/4 cup plain yogurt
- 1 teaspoon poppy seeds
- 1 teaspoon finely chopped fresh tarragon leaves
- 7-ounce cooked chunk chicken breast
- 1 cup red seedless grapes, cut in 1/2
- 2 ribs celery, chopped
- 1/4 cup chopped walnuts and/or pecans
- 6 cups spring mix lettuce
Autumn Chopped Salad

On a large bowl, combine the lettuce, pears, cranberries, pecans, bacon and feta cheese
- 3 c. chopped romaine lettuce
- 3 c. red leaf lettuce
- 2 chopped pears
- 3/4 c. dried cranberries
- 1 cup chopped pecans
- 8 slices crisp-cooked and crumbled bacon
- 4 oz crumbled feta cheese
- Poppy seed Salad Dressing of choice
Bloomin Brie Bowl

Preheat oven to 350°F. Mix spices and sugar; set aside
- 1 1/2 tsp chili powder
- 1/2 tsp ground mustard
- 1/2 tsp garlic powder
- 1/2 tsp sugar
- 1 round sourdough bread (about 1 pound loaf)
- 1 tbs butter, softened
- 1 (8oz) Brie cheese
Bananna Bran Muffins

- 3/4 c. buttermilk
- 1/2 c. mashed banana
- 1 beaten egg
- 2 tbs oil
- 4 tbs malasses
- 1 c. whole wheat flour
- 3/4 c. miller's bran
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 c. raisins
Jamaican Rice and Peas

In a medium saucepan, combine rice, coconut milk, water, beans, thyme, and lime zest
- 2 cups rice
- 1 (14-ounce) can coconut milk
- 2 1/4 cup water
- 1 (15-ounce) can red beans, drained
- 1 teaspoon dried thyme
- 1/2 teaspoon finely grated lime zest
- 1/4 cup chopped scallions
- Salt and freshly ground black pepper
Pear Salad

- 1/3 cup mayonnaise
- 6 leaves of lettuce
- 1 (15 ounce) cans pear halves
- Pineapple chunks
