- 1 pkg (9 oz) refrigerated cheese tortellini
- 40 pimiento olives
- 40 large pitted ripe olives
- 3/4 c Italian salad dressing
- 40 thin slices pepperoni
- 20 thin slices hard salami, halved
Tenderloin tips with mushroom cream sauce

Tender tenderloin tips with a tangy cream sauce served over noodles or rice
- For Sauce:
- 2 T oil
- 1 lb beef tenderloin tips, cubed
- 1 T black pepper
- Kosher salt
- 1 lb sliced button mushrooms
- 1/4 c chopped shallots
- 1 T minced garlic
- 1/2 c dry Marsala (not sweet) or dry white wine or dry sherry
- 1 c heavy cream
- 2 oz cream cheese
- 2 T stone-ground mustard
- 2 tsp fresh lemon juice
- 2 tsp minced fresh thyme
Balsamic Chicken with Thyme

- 1/4 c flour
- 3/4 tsp each salt and freshly ground pepper
- 4 skinned and boned chicken breast
- 2 T olive oil
- l large red onion,cut in half lengthwise, sliced thin
- 1 c chicken broth

- 2 tsp fresh thyme leaves or 1/2 tsp dried
Shrimp Burgers

- 1-lb large shrimp, peeled, deveined and coarsely chopped
- 4 T mayonnaise
- 3 T chopped green onions
- 1 tsp Old Bay Seasoning
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp ground red pepper
- 1 T fresh lemon juice
- 1 large egg
- 1 1/2 c Panko crumbs, dividied
- 1/4 c peanut oil
Hot Tamale Pie

A layer of cornbread on this casserole is just like eating a tamale
- 1 1/2 lb lean ground beef
- 1 c chopped onion (1 large)
- 1-10.75 oz can condensed tomato soup
- 1-8 oz can tomato sauce
- 3/4 c frozen whole kernel corn
- 1/2 c chopped pitted ripe olives
- 2 T chili powder
- 1/2 teas ground black pepper
- 3/4 c yellow cornmeal
- 1/2 c flour
- 1 teas baking powder
- 1/2 teas baking soda
- 1/2 teas salt
- 1 egg
- 1 c buttermilk or sour milk (1 T vinegar or lemon juice to enough milk to make cup total liquid-let this set for 5 minutes before adding to mixture
- 2 T veg oil

- Pork:
- Panko-crusted grit patties
- 2 c uncooked stone-ground grits
- 2 tsp salt
- 1 c freshly grated Parmesan cheese
- 1 large egg, lightly beaten
- 1 1/2 c panko bread crumbs
- 1/4 to 1/2 teas ground red pepper (optional)
- Vegetable cooking spray
- 1 1/4 lb boneless pork chops
- 1/4 c flour

- 4 T olive oil, divided
- 1 c chopped celery
- 1/2 c chopped green pepper
- 1/2 c chopped red pepper
- 2 c sliced baby portobello mushrooms
- 1 (14.5 oz) can diced tomatoes with garlic and onion
- 1/2 c low-sodium chicken broth
- 1 1/2 tsp chopped fresh thyme or 1/2 tsp dried
- 3/4 tsp chopped fresh oregano or 1/4 tsp dried
- 1/4 to 1/2 tsp dried crushed red pepper
