Ingredients

  • 1 1/2 lb lean ground beef
  • 1 c chopped onion (1 large)
  • 1-10.75 oz can condensed tomato soup
  • 1-8 oz can tomato sauce
  • 3/4 c frozen whole kernel corn
  • 1/2 c chopped pitted ripe olives
  • 2 T chili powder
  • 1/2 teas ground black pepper
  • 3/4 c yellow cornmeal
  • 1/2 c flour
  • 1 teas baking powder
  • 1/2 teas baking soda
  • 1/2 teas salt
  • 1 egg
  • 1 c buttermilk or sour milk (1 T vinegar or lemon juice to enough milk to make cup total liquid-let this set for 5 minutes before adding to mixture
  • 2 T veg oil

Preparation

Step 1

Preheat oven to 425. In a large skillet add ground beef and onion. Break up and cook until onion is tender and meat is browned. Drain off fat. Stir soup, tomato sauce, corn, olives, chili powder and pepper to meat mixture. Bring just to boiling and spoon into a 2-quart baking dish. Set aside.
In a medium bowl combine cornmeal, flour, baking powder, baking soda and salt. In a small bowl whisk together egg, buttermilk, and oil, Add to cornmeal mixture, stir until batter is smooth. Spread over meat mixture and bake for 35 minutes or until top of crust in nice and brown. Serve warm.
