Chocolate Chip Torte

One of my favorite cakes when I was little
- 1 3/4 c flour
- 3 T cocoa
- 1/2 teas salt
- 1 c dates, finely chopped
- 1 c boiling water
- 1 teas baking soda
- 2 eggs beaten
- 1/2 c butter
- 1/2 c shortening
- 1 c sugar
- 1 teas vanilla
- 1 c chopped nuts
- 6 oz pkg chocolate chips
Banana Cream Pie Filling

My mom's famous banana cream pie was a favorite at our house
- 1/3 c flour
- 2/3 c sugar
- 1/4 teas salt
- 2 c milk, scaled
- 2 T butter
- 3 egg yolks, beaten
- 1/2 T vanilla
- 1 baked pie crust
- 1-8oz cool whip
- 4-6 bananas
Balsamic Salad Dressing

A tart dressing great for a spinach salad
- 1/2 c sugar
- 1/2 c olive oil
- 1/2 c balsamic vinegar
- 1 1/2 T minced green onions
- 1/2 teas paprika
- 1/2 teas worcestershire sauce

Crusted chicken cutlets with a creamy sauce
- Pasta:
- 8 oz dry linguine
- Cutlets:
- 1/2 c all purpose flour
- 2 eggs, beaten
- 2 c panko bread crumbs
- 2 boneless, skinless chicken breasts( 8 oz each) thin cut of pounded thin and seasoned with salt and pepper.
- 6 T olive oil
- Sauce:
- 1/2 c minced shallots
- 1 T minced fresh garlic
- 1 T flour
- Deglaze:
- 1/4 c dry white wine
- 3/4 c chicken broth
- 1 T minced lemon zest
- 1/4 c each fresh lemon juice and heavy cream
- 2 T capers, drained
- 1 T tomato paste
- 2 T butter, cubed
- 2 T minced fresh parsley
Heather's Chicken Salad

A great crunchy chicken salad given to me by Heather and we made it a lot when we were together
- 4 c cooked chicken cut up into cubes
- 4 c celery sliced
- 1/2 c almonds (slivered)
- 1 T accent
- 1 teas salt
- 2 T red onions (diced)
- 4 T lemon juice
- 2 c light mayonnaise (mix the lemon juice and mayo together before mixing it in the salad.
Greek Chicken Roulades

Stuffed chicken breasts with kalamata olives and a white wine reduction
- 12 pitted kalamata olives, divided
- 3 T each minced oil-packed sun-dried tomatoes and fresh bread crumbs
- 1 T minced lemon zest
- 2 garlic cloves
- 1 tsp dried oregano
- 2 boneless, skinless chicken breasts trimmed
- 2 tsp olive oil
- 1/4 cup diced onions
- 1/4 c dry white wine
- 1 1/2 c chicken broth
- 1 T fresh lemon juice
- 1 tsp cornstarch
Parmesan-Crusted chicken with sage butter sauce

- Dipping mixture:
- 2 boneless, skinless chicken breasts sliced in half
- 2 egg whites
- 2 tsp cornstarch
- juice of 1/2 a lemon
- Crusting mixture:
- 1 c panko crumbs
- 1 T chopped fresh parsley
- 1 tsp kosher salt
- 1/4 tsp pepper
- minced zest of 1 lemon
- 3 T olive oil
- Sauce:
- 3 T minced shallots
- 1 T butter
- 1/2 c dry white wine
- 1/2 c heavy cream
- 1/2 c chicken broth
- 1 tsp lemon juice
- 4 T cold butter, cubed
- 1-2 tsp minced fresh sage
- salt, white pepper and cayenne pepper is desire
German Apple Pancake

- Pancake:
- 3 large eggs
- 3/4 c milk
- 3/4 c flour
- 1/2 teas salt
- 1 1/2 T butter
- 1/2 c thinly sliced apples
- Filling:
- 1 lb tart fresh apples
- 1/4 c melted butter
- 1/4 c sugar
- cinnamon
- nutmeg
- Topping:
- 2 T melted butter
- powdered sugar for dusting
Parmesan Crusted Chicken Breasts

- 1/2 c Hellmann's Mayonnaise
- 1/4 c grated parmesan cheese
- 4 chicken breast halves, butterflied and sliced thin about 10 pieces.
- 4 T panko bread crumbs

- 1 c butter, room temperature
- 3/4 c canned pumpkin
- 1 c light brown sugar
- 1/2 c white sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
- 1 tsp salt
- 2 1/2 c flour
- 1-2 c chocolate chips depending on how much chocolate you want in your cookie
