Fried Okra

This is one of the best fried okra recipes yet
- 1/2-3/4 c cornmeal
- 1 c flour
- 1/2 c buttermilk
- Oil for frying, I used peanut oil
- Fresh okra sliced
Pork and Mushroom Stew

Great tasting stew served on mashed potatoes
- 1 T olive oil
- 1 T unsalted butter
- 1 1/2 lb pork tenderloin, trimmed, cut into 2 inch pieces, dried with paper towels, and seasoned with salt and pepper.
- 8 oz cremini mushrooms, quartered
- 1/2 c sliced leeks or shallots
- 1/2 c diced carrot
- 2 T flour
- 1/2 c dry sherry or white wine
- 3/4 c apple cider or juice
- 3/4 c chicken broth
- 1 T minced fresh thyme
- salt and pepper to taste
Beef Roulades

Beef with Dijon mustard, onions and bacon rolled up and simmered until tender and finished off with gravy
- 1/4 c Dijon mustard
- 8 slices top round steak 1/4 inch thick (about 2 pounds)
- Salt and pepper to taste
- 8 bacon strips
- 1 large onion, cut into thin wedges
- 3 T oil
- 3 c beef broth
- 1/3 c flour
- 1/2 c water
Fish and Chip Cakes

Fish poached in beer and then made with salt and vinegar potato chips into fish cakes
- Poach:
- 1 1-lb cod fillets
- 1 bottle dark beer, such as Guinness
- Pulse:
- 1 1/2 c finely crushed Salt and Vinegar potato chips
- 1/4 c each chopped scallions and fresh parsley
- 1 T chopped garlic
- 1 egg
- 1 tsp Old Bay Seasoning
- 1/2 tsp black pepper
- 2 T olive oil
Balsamic Tomatoes

- 3 to 4 fresh red tomatoes, sliced into 1/4 inch slices
- 1 bottle Balsamic Vinegar, reduced
- 1 red onion, sliced into 1/4 inch slices
- 1 container blue cheese crumbles
- fresh basil, chopped
Crab and Shrimp Cakes with Caper Sauce

These crab cakes are a better than most crab cakes
- Sauce:
- 2 T capers, rinsed and drained
- 2 T mayonnaise
- 1 T fresh lemon juice
- 1/2 teas Dijon mustard
- Cakes:
- 3 teas olive oil
- 1/2 lb shrimp, peeled and deveined
- 1 medium yellow or red pepper, finely chopped
- 2 medium shallots, finely chopped
- 1 lb fresh lump crabmeat
- 1 large egg
- 2 T finely chopped chives
- 1 teas Dijon mustard
Hot Fudge Pudding Cake

- 1 1/4 c sugar, divided
- 1 c flour
- 7 T cocoa, divided
- 2 teas baking powder
- 1/4 teas salt
- 1/2 c milk
- 1/3 c butter, melted
- 1 1/2 teas vanilla
- 1 c semi-sweet chocolate chips
- 1/2 c brown sugar
- 1 1/4 c hot water
Pizza Hot Dish

A great and easy pizza casserole
- 1 1lb hamburger
- 2 cans tomato soup
- 6 oz pkg noodles, cooked
- 1/2 lb cheddar cheese, grated
- 1/4 c parmesan cheese
- 1/2 teas garlic salt
- 1/2 teas onion salt
- 1/2 teas oregano
- 1/4 teas black pepper
Red Velvet Cookies

- 1 pouch Betty Crocker Sugar Cookie Mix
- 1/3 c unsweetened cocoa
- 1/4 c butter, softened
- 1/4 c sour cream
- 1 T red food coloring
- 1 egg
- Betty Crocker Rich and Creamy Cream Cheese frosting
- 1/4 c chopped nuts
