Ingredients

  • 8 oz boiled potatoes
  • 1/4 c butter
  • scant 1 c self-rising flour
  • 1/2 tsp salt

Step 1

Mashed the potatoes and let cool. Sift the flour and salt together and stir into the mashed potatoes to form a soft dough. If the potatoes are cold, mash them without adding the butter. Sift the flour and salt together. Rub in the butter with your fingertips until the mixture resembles fine bread crumbs, then stir the flour and butter to form a soft dough. Either roll or press the dough into a l0 inch circle pushing the edge to form a ridge before adding your toppings. Then dough is much easier to handle if you roll it out on your cookie sheet. Add your favorite toppings and cook at 400 for 20-25 min or until crust looks done.
