Balsamic Tomatoes


A great way to use up your summer tomatoes. A very tasty way to serve tomatoes.

  • 3 to 4 fresh red tomatoes, sliced into 1/4 inch slices
  • 1 bottle Balsamic Vinegar, reduced
  • 1 red onion, sliced into 1/4 inch slices
  • 1 container blue cheese crumbles
  • fresh basil, chopped



Step 1

Pour the bottle of Balsamic Vinegar in a sauce pan and cook over low heat for 40-60 minutes until reduced and thick. Set aside to cool.
Cut tomatoes into 1/4 inch slices and place on a platter.
Cut red onion into 1/4 slices and place 1 large ring and 1 small ring of onion on each tomato slice. Spoon balsamic vinegar on each tomato. Sprinkle some blue cheese on each tomato and top with chopped fresh basil. Let set for about 1 hour and serve.
