Einkorn No Knead Sourdough Bread

You can substitute bread flour or all-purpose flour for high-extraction flour
- 2 cups high-extraction einkorn flour (see sources)
- 1 1/2 cups whole-grain einkorn flour, preferably freshly ground
- 1/4 cup proofed and bubbly sourdough starter
- 1 1/2 cups room temperature water
- 2 teaspoons finely ground unrefined sea salt
- olive oil, for oiling the bowl
Pasta with Tomato Cream Sauce - Pioneer Woman

Heat the butter and oil in a large skillet over medium heat
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 medium onion, finely diced
- Two 15-ounce cans tomato sauce or marinara sauce
- Dash of sugar (or more to taste)
- Salt and freshly ground black pepper
- 1 1/2 pounds fettuccine
- 1 cup heavy cream
- Grated Parmesan or Romano, as needed
- Chopped fresh basil, for serving
Pasta Fagioli with Sausage

In a large saucepan, heat oil over medium-high heat
- 2 Tbsp. olive oil
- 1/2 lb. sweet Italian Sausage, casings removed
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (28 oz.) crushed tomatoes
- 1 tsp. dried Italian herb seasoning
- 1/4 tsp. onion salt
- 1/4 tsp. black pepper
- 1 lb. ditalini pasta
- 2 cans (19 oz. each) cannellini beans, drained and rinsed
- 1/2 cup grated Parmesan cheese
Chili Mac and Cheese

Heat olive oil in a large skillet or Dutch oven over medium high heat
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 8 ounces ground beef
- 4 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes (or canned Rotel)
- 1 can Great Northern Beans, drained
- 1 can Pinto Beans, drained
- 2 teaspoons chili powder
- 1 1/2 teaspoon cumin
- 1 T brown sugar
- Kosher salt and freshly ground black pepper, to taste
- 10 ounces uncooked elbows pasta
- 3/4 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley leaves
