Six Weeks Muffins

Batter will keep six weeks in refrigerator
- 1 box raisin bran (15 oz)
- 5 cups plain flour
- 3 cups sugar
- 1 T cinnamon
- 1 tsp. salt
- 5 tsp. baking soda
- 1 qt. buttermilk
- 4 eggs - slightly beaten
- 1 cup oil (I use 1/2 canola and 1/2 coconut oil)
Lentil Vegetable Soup - Barefoot Contessa

May have to buy French green lentils at a specialty store
- 1 pound French green lentils
- 4 cups chopped yellow onions (3 large onions)
- 4 cups chopped leeks, white part only (2 leeks)
- 1 tablespoon minced garlic (3 cloves)
- 1/4 cup good olive oil, plus additional for drizzling on top
- 1 tablespoon kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- 1 tablespoon minced fresh thyme leaves or 1 teaspoon dried
- 1 teaspoon ground cumin
- 3 cups medium-diced celery (8 stalks)
- 3 cups medium-diced carrots (4 to 6 carrots)
- 3 quarts chicken stock
- 1/4 cup tomato paste
- 1 jar Rotel tomatoes
- Red Pepper flakes to taste
- 2 tablespoons red wine or red wine vinegar
- Freshly grated Parmesan cheese
Restaurant Smashed Potatoes - Pioneer Woman

Poke a few holes in the potatoes and nuke (or bake in a 400 degree F oven) until fork-tender
- 5 whole large red potatoes
- 1 stick butter, softened and cut into pieces
- 1 cup pepper jack cheese, grated
- 3/4 cup sour cream
- 5 slices bacon, cooked and crumbled
- 2 whole green onions, sliced, plus more for topping
- Salt (add plenty!)
- Freshly ground black pepper (ditto!)
- 3/4 cup French fried onions
Vanilla Cashew Cream

Can use instead of dairy cream
- 1 cup organic raw cashews soaked for 2 hours
- 1/4-1/2 cup filtered water depending on desired thickness
- 1-2 Tbsp maple syrup, or more to taste
- 1/2 tsp natural vanilla extract, or a little more to taste
- a pinch of Celtic sea salt

Mint Chocolate Green Smoothie

Blend until smooth
- 1/4 cup avacado
- 1/2 cup kale, firmly packed
- 3/4 cup vanilla almond milk, unsweetened
- 1/4 cup vanilla greek yogurt
- 1 scoop vanilla protein powder
- 1 T dark chocolate chips/chunks
- 1/4 t peppermint extract
- 1/2 cup ice
- 1 packet stevia sweetener
Tomato Soup-Pioneer Woman

Pioneer Woman
- 1 medium white or yellow onion
- 6 tablespoons (3/4 stick) butter
- Two 14.5-ounce cans crushed tomatoes
- One 46-ounce bottle or can tomato juice
- 3 to 6 tablespoons sugar
- 1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
- Freshly ground black pepper
- 1 cup sherry, optional
- 1 1/2 cups heavy cream
- 1/4 cup chopped fresh basil
- 1/4 cup chopped flat-leaf parsley
Cheesecake

Preheat oven 325. Bake about 30 minutes in 325 oven
- Crust:
- 13 graham crackers (crushed)
- 3 Tbs. sugar
- 1/3 cup butter (melted)
- Press in 8 inch square pan
- Filling:
- 2 8-oz pkg. cream cheese
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla
- Mix well; pour into graham cracker crust.
Creamy White Bean Soup with Smoked Ham Hocks

- 1 1/2 cups chopped onion
- 1 cup diced celery
- 1 cup diced carrot
- 1 tablespoon chopped fresh thyme
- 6 garlic cloves, chopped
- 2 pounds smoked ham hocks
- 1 pound dried Great Northern beans
- 2 (26-ounce) containers unsalted chicken stock (such as Swanson)
- 1/4 cup minced fresh chives
- 1 teaspoon freshly ground black pepper
