- 2 sticks salted butter, softened
- 1 cup sugar (or more to taste)
- 1 tablespoon ground cinnamon
- 2 teaspoons vanilla extract (or more to taste)
- 16 slices bread (whole wheat is great!)
Bowtie Chicken Alfredo - Pioneer Woman

Cook pasta according to package directions
- 12 ounces, weight Bowtie Pasta (farfalle)
- 4 Tablespoons Butter
- 2 whole Boneless, Skinless Chicken Breasts
- Salt And Pepper, to taste
- 2 cloves Garlic, Minced
- 3/4 cups Dry White Wine (may Substitute Low-sodium Chicken Broth)
- 1/2 cup Half-and-half
- 3 Tablespoons Heavy Cream
- Low Sodium Chicken Broth, As Needed For Thinning
- 3/4 cups Parmesan Shavings Or Grated Parmesan
- 2 Tablespoons Fresh Parsley, Minced
Green Chile Mac and Cheese (with Chicken)

- 1 pound elbow macaroni
- 1 pound pepper jack cheese
- 1 large chicken breast, grilled or pan seared
- 2 poblano peppers (if you can find Hatch green chiles, use those)
- 1 Cup black beans (I used canned)
- 1 Cup sweet corn, frozen works best
- 3 Cups Milk
- 1 small onion, diced
- 4 Tablespoons butter
- 4 Tablespoons all-purpose flour
- 1 Cup panko breadcrumbs
- Salt and Pepper
Frittata - Basic

While this frittata features spring veggies, it is easy to adjust this basic recipe to use with summer veggies
- 6 -12 eggs
- 1/4 cup milk or cream (for 6 eggs)
- 1 tablespoon olive oil
- 1/2 cup chopped onions, scallions or chives
- Chopped peppers
- Chopped garlic scapes, if you have them
- 1 cup chopped greens. Kale, swiss chard, spinach or turnip greens work beautifully
- Cooked bacon, ham, or sausage, chopped or crumbled
- 1/2 cup or more cheese of your choice
White Bean and Spinach Pizza

1 Heat oven to 425°. Pour enough boiling water over dried tomatoes to cover; let stand 10 minutes
- 1/2 cup sun-dried tomato halves (not oil-packed)
- 1 can (15 oz) cannellini (white kidney) beans or 1 can (15 or 16 oz) great northern beans, drained, rinsed
- 2 medium cloves garlic, finely chopped
- 1 package (10 ounces) ready-to-serve thin Italian pizza crust (12 inches in diameter)
- 1/4 teaspoon dried oregano leaves
- 1 cup firmly packed washed fresh spinach leaves (from 10-ounce bag), shredded
- 1/2 cup shredded reduced-fat Colby-Monterey Jack cheese (2 ounces)
Chicken and Rice Casserole

- 1 can cream celery soup
- 1 can cream of chicken soup
- 1 cup milk
- 1 cup uncooked minute rice
- 1 pkg. dry Lipton onion soup mix (reserve just a little bit)
Jalapeno Popper Pizza

- Crust:
- 1-3/4 to 2-1/4 cups all purpose flour
- 1 envelope Fleischmann's® Pizza Crust Yeast
- 1-1/2 teaspoons sugar
- 3/4 teaspoon salt
- 2/3 cup very warm water (120° to 130°F)*
- 3 tablespoons butter
- Topping:
- 8 ounces cream cheese, softened
- 1/3 cup Real California® sour cream
- 1/2 teaspoon Spice Islands® Garlic Powder
- 2 cups shredded Real California® mozzarella cheese
- 2 to 4 fresh jalapeno peppers, thinly sliced
- OR 1/2 to 1 cup well drained pickled jalapeno slices

- 1/2 cup chicken broth

- 1 cup (Real) Mayonnaise
- 1/2 cup Sour Cream
- Buttermilk (as Needed To Desired Consistency)
- White Vinegar (optional, To Taste)
- Worcestershire Sauce, To Taste (optional)
- Fresh Dill (optional, To Taste)
- Cayenne Pepper (optional, To Taste)
- Paprika (optional, To Taste)
- Fresh Oregano (optional, To Taste)
- Tabasco (optional, To Taste)
Chicken Tamale Pie

- 1/3 cup fat free milk
- 1 egg
- 1 1/2 tablespoons taco seasoning, divided (I made my own taco seasoning using THIS recipe)
- 1/4 t. ground red pepper
- 1 (14.75 oz) can cream-style corn
- 1 (8.5 oz) box Jiffy corn muffin mix
- 1 (4 oz) can chopped green chiles, drained
- 1 (10 oz) can red enchilada sauce
- 2 cups cooked, shredded chicken breasts (or 1 large can)
- 3/4 cup Monterey Jack cheese, shredded
- cilantro and crumbled Cotija cheese for serving
