Hot Roast Beef Sandwiches

These hot roast beef sandwiches are great for lunch, dinner, or even just a snack if you use small dinner rolls
- DRESSING:
- 12 whole dinner rolls, or small sandwich buns (I Used whole wheat)
- 1 pound roast beef, thinly shaved, or ham or both
- 1 pound Cheese (Provolone, Swiss, Mozzarella, Even Cheez Whiz)
- 1/4 cup mayonnaise
- 3 tablespoons onion, grated
- 1 tablespoon poppy seeds
- 1 tablespoon spicy mustard
- 1 tablespoon horseradish mayo or straight prepared horseradish
- Dash Worcestershire sauce
- Optional Dressing Ingredients: Sriracha, Hot Sauce, Dried Onion Flakes
- Instead Of Fresh, Garlic Powder, Pepper, Etc.)
Pecan Pie - Crockpot

- 1 uncooked piecrust
- 3 eggs
- 1 cup sugar
- 2/3 cup dark Karo syrup
- 1 cup pecans, broken up

Barbeque Chicken Pizza

Brush a large bowl with olive oil
- 1 teaspoon extra-virgin olive oil, plus more for brushing
- 1/2 pound prepared pizza dough, at room temperature
- 1/3 cup plus 2 tablespoons dark barbecue sauce
- 1 8 -ounce skinless, boneless chicken breast
- Kosher salt and freshly ground pepper
- 2/3 cup grated smoked gouda cheese (about 3 ounces)
- 2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
- 1/2 small red onion, thinly sliced
- Fresh cilantro, for topping
Fish Tacos

Make the guacamole by mashing up the avacados and adding pico de gallo, salt and pepper
- Frozen mahi mahi strips, thawed and blotted
- Fish rub (I use Rufus Teague)
- Corn or flour tortillas
- Shredded cabbage
- Fresh pico de gallo
- Avacado/cilantro dressing
- Guacamole
- Two Two avacados, mashed up

Homemade Chicken and Biscuits

Preheat the oven to 375 F and grease a 9×13 casserole dish
- butter – 3 tbsp
- onion – 1 medium, chopped
- celery – 1 rib, finely chopped
- salt and pepper – to taste
- all purpose flour – 2 tbsp
- chicken broth – 1 3/4 cup
- thyme – 1 tsp, chopped, fresh
- milk – 1/2 cup, whole
- chicken – 3 cups, cooked, chopped
- carrot – 1, roughly chopped
- peas – 1 cup frozen
- lemon juice – 1 tsp
- biscuits – 12, storebought or homemade
- egg – 1
- water – 1 tbsp
Greens w/ Carrots, Feta, and Brown Rice

- 2 bunches dark leafy greens (kale, collard greens or Swiss chard), tough

- 1/2 red onion, finely chopped

- 1/4 pound feta cheese, crumbled
