- 1 cup pumpkin puree fresh or canned
- 1 tablespoon maple syrup
- 1/3 cup apple sauce
- 1 teaspoon vanilla
- 1/4 cup vegan palm shortening or melted coconut oil
- 1 cup oat flour
- 1/2 cup almond meal
- 1/2 teaspoon baking soda
- 1/2 teaspoon aluminum-free baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- pinch sea salt
- 1/2 cup pecans chopped
- 1/4 cup mini chocolate chips
Fettuccine Alfredo - Pioneer Woman

- 1 pound Fettuccine Noodles
- 1 stick Butter
- 1 cup Heavy Cream
- Salt and Pepper, to taste
- 2 cups Freshly Grated Parmesan Cheese
Chex Party Mix

In a grrrreat big bowl, measure 3 cups each of Corn, Wheat, and Rice Chex
- 3 cups Corn Chex
- 3 cups Wheat Chex
- 3 cups Rice Chex
- 2 cups Pretzel Sticks
- 2 cups Mixed Nuts
- 1 stick (to 1 1/2 Sticks) Butter)
- 3 Tablespoons Worcestershire Sauce
- 6 dashes (to 12 Dashes) Tabasco Sauce
- 3 cloves (to 5) Garlic, Mashed
- 1 teaspoon Lawry's Seasoned Salt
- 1/4 teaspoon Onion Powder
Spinach Salad

Combine salad ingredients then drizzle dressing over individual servings
- Dressing:
- 1 pkg. baby spinach – fresh - (if not already done, wash, dry, take off stems)
- 1 can water chestnuts (drained and sliced)
- 2 hard boiled eggs (chopped)
- 3 slices crumbled, crisp bacon
- 3/4 cup toasted pecans or pine nuts (put in 350 oven for about 10 minutes…until toasted)
- 1/4 cup chopped sweet onion (i.e. Vidalia or Malaysian sweet)
- 3/4 cup sugar
- 1/2 cup Wesson oil
- 1/3 cup catsup
- 1/4 cup cider vinegar
- 2 Tblsp. Worcestershire sauce
Meatloaf - Instant Pot

Your favorite recipe for meatloaf can also be used
- 2 lbs lean ground beef
- 1/2 cup Italian bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely minced yellow onion
- 1 large egg, beaten
- 1 T minced garlic
- 2 t Worcestershire sauce
- 1/2 t dried thyme
- 1 t salt
- 1/2 t pepper
- 1 T vegetable oil
- 1 yellow onion, diced
- 1 cup ketchup (can use BBQ sauce if preferred)
- 1/2 cup beef stock or broth
Breakfast Smoothie

1. Soak the oats in the water for 5-10 minutes
- 1/2 cup milk (can use any alternative or nut milk you choose)
- 1/2 cup Stonyfield Whole Milk French Vanilla Yogurt
- 1/2 cup quick oats, soaked in 1/2 cup water
- 1 banana
- 2 tbsp peanut butter (or other nut butter of your choice)
- 1 tbsp chia seeds (optional)
- 1 tbsp cocoa powder (optional)
Lemon-Shallot Vinaigrette

Stir together lemon juice and minced shallot; let stand 5 minutes
- 1/2 cup fresh lemon juice
- 1 minced shallot
- 1 cup olive oil
- 1/4 cup minced fresh flat-leaf parsley
- 1 tablespoon honey
- 1 tablespoon whole grain Dijon mustard
- Salt and pepper to taste

- Savoie are good)
- 1 green bell pepper, chopped
- 1 large onion, chopped
- 1 rotisserie chicken, meat removed and cut up
- 1 1/2 lbs smoked sausage, sliced 1/4" thick (kielbasa type)
- 1/2 lb shrimp, peeled and deveined
- 6 cups chicken broth
- 1/2 T brown sugar
- Cajun seasoning to taste (Slap ya Mama or Tony Chachere's are good)
- Cayenne pepper to taste
