Roasted Sausage, Potatoes, Peppers

Spray a large baking pan w/ nonstick spray (make sure there is at least a small “lip” that provides a “side...
- 1 package (at least 1 lb) of your favorite sausage links (johnsonvilles, evergood, generic smoked sausage, whatever you like. i used polish sausages, 4 to a pack)
- 4-5 decent-sized potatoes (i prefer yukon gold or red bliss)
- 1 small jar banana peppers
- 1-2 bell peppers, sliced
- 1 large onion, sliced
- 3 tbsp olive oil (yes, it has to be OLIVE oil)
- salt & pepper
- optional — 2 tsp dried rosemary
- optional — 3 tbsp creole seasoning
Beef Brats and Onion Panini

Cook the Brats either microwave (2 minutes) or grill
- 4 slices of french bread cut on the diagonal for length of brats
- 2 beef brats cooked either microwave or grilled
- 1 onion sliced to make ringlets
- 2 tablespoons mustard (Dijon or Jalapeno Mustard)
- 4 small slices of Gruyere cheese
- 1 oz of liqueur (like Grand Marnier or B&B)
- olive oil (or butter) for frying and cooking
Pork Loin with Cinnamon Rub

Cover pork loin with the rub and put it in a skillet on top of the stove with about two tablespoons olive oil

- 2 teaspoons salt
- 1/2 teaspoon black pepper

- Dressing/Marinade:
- 3/4 cups canola oil
- 3 tablespoons red wine vinegar
- 1 tablespoon balsamic vinegar
- 2 tablespoons lime juice
- 2 tablespoons plus 1 teaspoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon hot chili oil
- 2 tablespoons sugar
- 1 tablespoon minced fresh ginger
- 3 cloves garlic, peeled and minced or chopped
- 1 teaspoon kosher salt
- Lots of freshly ground black pepper
- 2 whole 1-inch rib eye steaks, extra fat trimmed
- Onion Strings:
- 2 whole onions
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon kosher salt

- 1 clove garlic, minced
- 1 tsp red pepper flakes

Cornbread Dressing

This Cornbread Dressing pairs perfectly with turkey, gravy, and all the usual holiday sides that everyone craves
- 1 (8x8 pan) of baked cornbread
- Six large biscuits, 1 day old
- Five or six cooked turkey necks
- 1 1/2 cups diced yellow onions
- 1 cup diced celery
- 1 tablespoon butter
- 2 teaspoons poultry seasoning
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Quesadillas

- 4 (8 inch) whole-wheat tortillas
- 1-1/2 cups frozen, roasted corn kernels, thawed
- 1 (15 ounce) can black beans, drained and rinsed
- 3 avocados, sliced
- 6 ounces shredded cheddar cheese
- 2 cups salsa of your choice
- Nonstick cooking spray
- Sour cream for topping (optional)
- Can add chicken, beef, shrimp.
Roasted Chicken - Dutch Oven

This cooking method allows for the chicken to simmer in its own juices
- 1 whole organic/pastured chicken (4 1/2 to 5 pounds), giblets removed
- 2 teaspoons good salt
- several grinds of ground black or white pepper
- 2 tablespoons butter
- 1 small onion, rough chopped (or about 1/2 cup)
- 1 small stalk celery, rough chopped (about 1/4 cup)
- 6 medium garlic cloves, skin removed
- 1 bay leaf
- 1 medium sprig fresh rosemary (optional)
- 1/2 cup dry white wine (optional)
Creamy Tomato Tortellini Soup

Saute garlic with the olive oil in a large stock pot over medium heat until golden brown
- 2 whole large Cloves Of Garlic Minced
- 2 Tbl Olive Oil
- 2 10 3/4 oz Cans of Condensed Tomato Soup
- 1/4 cup Sun Dried Tomatoes, chopped or 2 Tbl Of Sun Dried Tomato Paste
- 2 cups Half-and-half
- 2 cups Chicken Stock
- 1 tsp Onion Powder
- 1 Tbl Italian Seasoning
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 whole FRESH 9 Oz Package Of Cheese Filled Tortellini
- 1/2 cup Shredded Parmesan Cheese, for garnish
- For more heartiness, can add Italian sausage
Shrimp Quesadillas - Pioneer Woman

On a large plate, pour the red sauce over the shrimp and set aside
- 1 cup Mexican red sauce
- 12 large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 large onion, chopped into chunks
- 1 green bell pepper, chopped into chunks
- 1 red bell pepper, chopped into chunks
- Butter, for cooking tortillas
- 6 flour tortillas
- 2 cups grated cheese ( Monterey Jack is best)
- Sour cream, for serving
- Fresh cilantro leaves, for serving
- Lime wedges, for serving
